Szechuan Spicy Beef

The flavor of Szechuan (especially that famous sauce!) is so delicious. It’s flavorful and has just the right amount of kick. So naturally, I had to figure out how to produce it at home! But what is the Szechuan flavor? According to WiseGeek: Szechuan cuisine features flavors that are found in Szechuan beef. The Sichuan province in the west of China is the home of Szechuan food. Spiciness and rich flavor are hallmarks of Szechuan food, and it aims to bring together salty, bitter, sweet, sour, and pungent flavors. Delicious. As a result, we all want to make this now. Right? Spicy Chicken Lettuce Wraps (Paleo & Primal)

I first has lettuce wraps at PF Chang’s a few years ago. Those things are money, they’re so delicious. So I decided to just make my own chicken wraps (much healthier, no sketchy ingredients). This is actually a recipe from Ditch The Diet. It’s super simple, really delicious and refreshing with the crunchy romaine I got from the farmers market. It’s kind of like a salad, but not in the form of a salad. So I dig it. Paleo Spicy Chicken Lettuce Wraps This paleo chicken lettuce wraps recipe is actually a recipe from Ditch The Diet. Lacto Fermented Garlic Aioli

I have something to share with you. Aioli is just a fancy word for flavored mayo. So garlic aioli = garlic-flavored mayonnaise. If you omitted the roasted garlic, this would just be mayo, and I love me some mayo. Unfortunately, most mayo is made using rancid vegetable oils that are high in inflammatory omega-6 fatty acids. Since I’m trying to avoid heart disease, obesity and cancer, I tend to avoid store-bought mayo. These are the ingredients in Hellman’s olive oil mayo: WATER, SOYBEAN OIL, OLIVE OIL, WHOLE EGGS AND EGG YOLKS, MODIFIED POTATO STARCH, VINEGAR, SALT, SUGAR, LEMON JUICE, SORBIC ACID AND CALCIUM DISODIUM EDTA (USED TO PROTECT QUALITY), NATURAL FLAVOR, PAPRIKA OLEORESIN GMOs, preservatives and sketchy ingredients. No thanks. It’s easier to just make my own and not inflame my insides. Lacto-Fermented Garlic Aioli An easy recipe for the best ever Roasted Garlic Aioli made in your food processor!…

Scallops Over Cauliflower Puree

I love serving these scallops over cauliflower puree! Some people also call it cauliflower mash. Call it whatever you want. Just steam cauliflower until soft, put it in the blender with a shit ton of butter, puree until smooth. Boom. I don’t usually buy scallops because they’re on the pricier side. But when I was in my local, organic grocery store, these were marked down because the day I was shopping also happened to be the “sell by” date for these babies. They were only $2.50! How awesome is that. Tomato Scallops on Cauliflower Puree Served on cauliflower puree these tomato-y pan-fried scallops make for the perfect low-carb lunch or appetizer! 6 sea scallops2 tbsp butter1 small tomato (I got mine from the farmers market, summer 'maters are too good)1 tbsp fresh parsley (chopped)1 garlic clove garlic (minced) Dice the tomato and saute in the butter.Add the scallops. A Thai place opened up in my ‘hood a few months ago and it was there that I discovered that green curry is the bomb. Thank god I figured out how to make this at home. Simple Snack: Prosciutto Wrapped Avocado

In Ditch The Diet I provide one simple snack idea everyday. So how in the world was I in my kitchen the other day talking to myself, saying “I’m hungry. But not that hungry. I want a snack. I can’t think of anything.” And then I realized I had eight weeks worth of snack ideas in DTD. I literally opened my computer and referenced my own program for snack ideas. Duh! I had prosciutto, and I had avocado. What a genius combinations. Salty from the prosciutto and creamy from the avocado. Protein and healthy fats to keep you satiated. Simply wrap some good quality prosciutto around slices of avocado. Is this not the simplest snack idea ever??

Carrot Ginger Soup (GAPS & Paleo)

Scott and I recently went to a baseball game (Nats, baby!) and afterward we went to one of his favorite Italian restaurants. He ordered the soup special, carrot and ginger, which sounded really gross to me for some reason. I was surprised he even ordered it, though the waiter did say it was really good. But like usual, my curiosity got the best of me and I tried it. And it was good. Like, really good. I tried to eat the rest but he wouldn’t let me. I’m one of those annoying girlfriends that tries to eat all of her boyfriend’s food and constantly eats off his plate. Joey Tribiani would have dumped me for sure (hopefully you understand this Friends reference). So the other day I’m debating what to make for dinner and I realize I have like, a 10 lb bag of carrots I have no idea what…
