I recently wrote a post about meal planning and prepping food for the week. In it I described how I cut up and marinated a shit ton of vegetables. And also chicken. But I date a vegetarian, so half of the kabobs were just veggies, the other half chicken and veggies. Here’s how I made them. Who else loves cupcakes? It’s all about the cupcake goodness. Paleo Vanilla Cupcakes An easy recipe for paleo almond flour vanilla cupcakes with the best ever coconut butter frosting! Make these for Easter or Mother’s Day! Muffins2.5 cups almond flour1/4 – 1/2 cup honey  (depending on how sweet you like it)1/2 cup coconut milk1/2 tsp baking soda1 tbsp apple cider vinegar1 tbsp vanilla2 eggsFrosting:the hardened cream from one can of coconut milk1/2 cup coconut butter (softened)1/2 cup maple syrup1 tbsp vanilla Preheat oven to 350F.Combine all ingredients and mix with a hand blender, or mix them all in the blender. I like to mix in the Vitamix to get the flour extra fine.Bake for 15-20 minutes.For the frostingCombine all ingredients and beat with a hand blender until smooth and and top cupcakes with frosting. I used these piping bags to decorate my cupcakes! 

Simple Summer Salad

Simple Summer Salad This simple salad with tomatoes, avocadoes, and red onions is perfect for summer! Ideal for meal prepping as well. 1 avocado (diced)4 cherry tomatoes (halved)1/4 red onion (sliced)2 tbsp olive oilsalt and pepper Combine all of the ingredients and give it a toss. Eat on a hot day. I am a huge fan of raw treats. Raw taco wraps? I love ’em. Beef jerkey made in my dehydrator? Amazing. Raw desserts? ARE THE BOMB. Unfortunately, a lot of store bought raw desserts contain agave nectar and are super expensive. If you have a good blender, raw desserts are actually really easy to make at home. Summertime is the perfect time of year to make this dessert. Berries are juicy, fresh and in-season. I even got these at my local farmers market. An easy recipe for spicy beef patties – serve them on a spinach salad for a low-carb dinner or lunch!  Spicy Jalapeno Spinach Burgers An easy recipe for spicy beef patties – serve them on a spinach salad for a low-carb dinner or lunch! 1/2 lb grass-fed ground beef1-2 jalapenos1/2 an onion2 cups raw spinach2 garlic cloves1 egga few drops of liquid smoke (hey, I don't have a grill!)1 tbsp Worcershire saucesalt and pepper The easiest way to prepare this is to blend all of the ingredients together. I did this in the Vitamix. I like to blend my ground beef, it makes it moister. Alternatively, you could chop all of this and mix it together by hand.Form into 4-5 burgers.Fry in coconut oil, lard, etc. for about two minutes on each side. I served my on spinach salad but you could also go for a gluten-free bun.

Pan Fried Smashed Potatoes

Pan-Fried Smashed Potatoes These golden crispy and delicious pan-fried smashed potatoes are the perfect side dish! Serve them alongside chicken, fish or beef! small fingerling potatoes (I used about 7)3 tbsp coconut oil1 garlic clove (minced)salt and pepper to taste Boil the potatoes until soft and let them cool.Smash them with the palm of your hand.Fry on each side in coconut oil until crispy.When they’re almost finished cooking, add the garlic. Make sure to add this last so it doesn’t burn.Serve! They’re crispy and delicious. Serve with chicken, fish or beef! Delicious!

I used to be so grossed out by the thought of eating liver, but now I literally crave it (which is my body’s way of telling me I need it). I buy a really tasty pate from Dean and Deluca (which is super pricey) and I think this version is just as good. Just try it. Crustless Quiche with Peppers, Onions and Cheddar (Paleo & Primal)

Crustless quiche is one of the most delicious “trendy” recipes I’ve ever seen. Here’s my version, 100% paleo, 100% primal, 100% deliciousness.   Paleo Crustless Quiche with Onions, Peppers, and Cheddar This Paleo Crustless Quiche with onions, peppers and cheddar is a great low-carb appetizer but also makes for a great main course when paired with a green salad. 6 large eggs2 cups peppers (sliced)1 onion (sliced1 jalapeno)1-2 cups cheddar (omit if you're a super strict paleo person)1 tbsp coconut oil or butter Preheat oven to 350F.Saute the peppers and onions until soft. In a blender, lightly blend the eggs and jalapeno (I like to blend the jalapeno so it doesn’t burn my fingers off). Add the peppers and eggs to a pie dish. Bake for 30 minutes, or until the eggs are set. Top with the cheddar and put it under the broiler for about 2 minutes.

Primal Tomato Basil Soup

  Primal Tomato Basil Soup This creamy tomato soup gets extra sweetness by roasting the tomatoes before mixing them with the rest of the soup ingredients! 5 large tomatoes (sliced in half and deseeded)1 large onion (diced)2 garlic cloves (minced)10 basil leaves1 cup organic spaghetti sauce3 cups chicken broth1 cup heavy cream (grass-fed, raw) Preheat your oven to 400. Roast the tomatoes for about 12 minutes.While the tomatoes are roasting, saute the onions in butter until soft.Add the garlic and give it a stir.Add the tomato, onion/garlic, 10 basil leaves and a little bit of broth to a blender. Blend until smooth.Add all ingredients to a pot and let it get a lil’ hot. Serve! In cool soup bowls. Serve as a main alongside a green salad or some gluten-free bread!Â
