Pan-Fried Smashed Potatoes
These golden crispy and delicious pan-fried smashed potatoes are the perfect side dish! Serve them alongside chicken, fish or beef!
- small fingerling potatoes I used about 7
- 3 tbsp coconut oil
- 1 garlic clove minced
- salt and pepper to taste
- Boil the potatoes until soft and let them cool.Smash them with the palm of your hand.Fry on each side in coconut oil until crispy.When they’re almost finished cooking, add the garlic. Make sure to add this last so it doesn’t burn.Serve! They’re crispy and delicious.
Serve with chicken, fish or beef! Delicious!
