Perfect Health Diet Spaghetti With Summer Tomatoes

Spaghetti is Scott’s favorite food and let’s be honest, zucchini noodles just don’t cut it. It’s not the same. I gave up spaghetti for a long time because I don’t eat wheat, until I found white rice noodles (which turned out to be an awesome gluten-free and safe starch alternative). I’ll be honest, I was skeptical at first. I thought it would be a lot like eating pad Thai or pho noodles with spaghetti sauce on top. Gross. But it turns out, they’re awesome. The white rice spaghetti noods have the same texture as regular ol’ pasta, and they don’t have a strange taste. Pasta on its own isn’t flavorful, so the noodles just taste like whatever sauce you add to them. And for the sauce I used fresh summer tomatoes and basil that we got from the farmers market. I love me some Asian eggplant. Whenever Scott and I go to the Thai place by our house we split the sauteed eggplant. I’ll be honest: I’m not a huge smoothie person. I don’t prefer to drink my meals and I don’t consider a smoothie a great meal replacement. Meals are meals, smoothies are smoothies. I actually consider them dessert. They are sweet, fruity and delicious, like dessert. Last night Scott and I had dinner and we were still a little hungry and both wanted something sweet so I decided to make a superfood smoothie. What’s makes it a superfood? It ain’t the blackberries, and I didn’t use some obscure nut or seed. What ups the nutrient density in this smoothie is two things: egg yolks and gelatin! Sometimes, I love spending a long time in the kitchen cooking. Scott will have a game on in the living room, I’ll be cooking an awesome dinner and drinking wine, and it’s really fun for me. But during the week, more often than not I am hungry and want some easy, tasty food in my stomach as soon as possible.   In this case, I have an arsenal of 20 minute meals; meals that are super easy to make and still taste great. And honestly, due to meal prepping, this dinner took me less than twenty minutes, more like 15.
