Gluten-Free Leftover Turkey and Wild Rice Soup

This gluten-free leftover turkey and wild rice soup is the perfect way to use up the bones and leftover meat from your Thanksgiving turkey! Every Thanksgiving I buy a huge turkey. In years past it’s because I often invite people last minute – people I find don’t have anywhere to go, a last minute guest showing up, and because I want to make sure everyone has enough AND I have leftovers. God I love leftovers. This year is different. This year there is a pandemic and like the experts warned, winter is surging. So it’s just my immediate family and my mother in law. We drove home to DC from Charleston and are having a lil’ Thanksgiving, just three adults and two toddlers. So why the hell did I buy a 17lb turkey? It’s my nature. I feed people even when there aren’t people to feed. And now I have…

Asian Chicken Wings (Gluten-Free, Keto)

These Asian chicken wings are only five ingredients plus they’re gluten-free, keto, paleo and super healthy! Ya’ll. I hate Buffalo sauce. Like it is just NOT good. It’s sour, there is no real depth of flavor, there’s no garlic or onion flavor. And to be honest I’d eat garlic in my pancakes I love it so much. I know everyone loves Buffalo sauce. But I’m not on the Buffalo sauce train. Especially after making these super easy Asian chicken wings, which are SO GOOD. See how beautiful they are? I served this up with some jasmine rice and a side of sautéed bok choy and shiitake mushrooms. Tons of veggies and the whole meal was packed with delicious Asian flavor. I love trying to come up with Asian dishes. They’re just so damn healthy if you use the right ingredients. Health Benefits: This recipe is gluten-free, soy-free, dairy-free, low-carb, paleo,…

Summer Pasta Salad (Gluten-Free, Dairy Free)

This summer pasta salad is gluten-free, dairy free, easy to throw together and insanely delicious! It’s the perfect side dish for summer and goes great at a cookout or barbecue! I think I’ve come up with the most perfect pasta salad. Truth be told, I make a lot of pasta salad. It’s my summer staple. Anytime we’re invited to a cookout or if we’re hosting one, my husband inevitably says, “What are you making? Let me guess. It is f*cking pasta salad again?!” Don’t let him fool you. We love pasta salad. And he normally eats most of it. Also don’t be deterred by the f word. We think it’s funny to jab each other and have been doing so for nearly ten years. This is an Italian style pasta salad, minus the Italian dressing. Trust me, fresh herbs and good olive oil are SO MUCH BETTER. I like to…

Smoked Salmon on Toast – a Healthy Gluten-Free Breakfast

Move over avocado toast, this gluten-free recipe for smoked salmon on toast is as delicious as it is healthy! Rich in protein and omega-3 fatty acids, it’ll be your new favorite breakfast! I love me some smoked salmon on toast. But being celiac, I never feel comfortable ordering it at a restaurant. I always have to wonder if they sliced it using the same knife they use for regular bread, or if they prepare it on the same surface. I just can’t take that chance. Which is why I almost never eat bread. We don’t have it a lot at home, but I’ve recently decided I’m going to start incorporating some fancy gluten-free toast into my diet. Why should I be deprived when I see all these delicious toasts on Instagram?! Isn’t toast unhealthy? Don’t get me wrong. Bread is not exactly a health food, it’s refined carbohydrate. But I’m…

Mexican Sheet Pan Chicken Tacos (Paleo, Keto)

Easy to assemble and quick to clean up, this healthy Paleo & Keto Mexican Sheet Pan Chicken Tacos recipe will become your family’s new favorite. Sheet pan meals in general and this healthy paleo chicken sheet pan dinner, in particular, are my latest obsession. Now that my boys are both super mobile – they’re 3 and 18 months, I don’t have the same time frame to make elaborate roast chicken dinners. When I had one kid or even when the baby was still a baby, I had time to sautee the peppers and onions or lovingly toss the chicken in a skillet. That time is now usually spent at a park trying to prevent toddlers from running into traffic. That’s not even an exaggeration. My youngest thinks this is a fun game to play. Reasons to cook more sheet pan dinners: Trust me, having a couple of easy recipes like these…

Free Summer Meal Plan

I’ve been more relaxed about meal planning this summer but this week felt like a good time to start again! Check out my free summer meal plan below! This summer has been amazing. I’m growing a lot of veggies in my backyard and getting fresh produce from the farmers market every week. I absolutely love summer. One of my favorite things to do is grill a bunch of fresh food for my family and hang out on our back deck. It’s just such an amazing season. Interestingly enough, I’m being a bit more lax about food lately. In the past I’ve been on very low carb, healing protocols due to gut issues. But I never really felt better. Now, I’m eating white rice if I want it. I’m not stressing over having a cookie with my son. And I’m not beating myself up over that extra glass of wine at…
