Crustless Quiche with Peppers, Onions and Cheddar (Paleo & Primal)

Crustless quiche is one of the most delicious “trendy” recipes I’ve ever seen. Here’s my version, 100% paleo, 100% primal, 100% deliciousness.   Paleo Crustless Quiche with Onions, Peppers, and Cheddar This Paleo Crustless Quiche with onions, peppers and cheddar is a great low-carb appetizer but also makes for a great main course when paired with a green salad. 6 large eggs2 cups peppers (sliced)1 onion (sliced1 jalapeno)1-2 cups cheddar (omit if you're a super strict paleo person)1 tbsp coconut oil or butter Preheat oven to 350F.Saute the peppers and onions until soft. In a blender, lightly blend the eggs and jalapeno (I like to blend the jalapeno so it doesn’t burn my fingers off). Add the peppers and eggs to a pie dish. Bake for 30 minutes, or until the eggs are set. Top with the cheddar and put it under the broiler for about 2 minutes.

What To Eat After A Peloton Workout

I’ve joined the cult of Peloton, okay?! And I LOVE IT! Don’t judge me. This is what to eat after a Peloton workout – from a nutritionist and health coach. Like so many people since the start of the pandemic, I bought a Peloton. I wanted to workout, I wanted my husband to workout, but I wasn’t comfortable going to gyms or yoga classes. You guys, a Peloton is surprisingly cheap. I also want to let everyone know that I didn’t shell out the few grand for a Peloton. I opted for a payment plan which makes the Peloton SO AFFORDABLE. I pay my Peloton off $50 a month with only an additional $100 in interest. That’s cheaper than a gym membership! It really, truly makes Peloton accessible to so many people. I really can’t recommend it enough. Anyway, I normally workout around 6am. Before my kids wake up. It’s…

Summer has always been my favorite season and I kind of ignored the lowly spring. This year though, I’m living for it! Maybe it’s because I’m getting older, but I notice the longer days, the warmer weather and the signs of the earth coming to life all around me. Little purple flowers are popping up in my backyard. It’s light out after 6 pm. My sons are taking off their jackets and refusing to put them back on. Spring is in the air! Best of all – spring produce is popping up at the farmers market! My market is bursting with fresh herbs, mushrooms, peas, asparagus – you name it. So I came up with a delicious gluten-free chicken and mushroom pasta.…

Paleo Huevos Rancheros

This paleo huevos rancheros recipe is surprisingly easy, quick, healthy, gluten-free, keto and low fodmap! I love food. It’s as simple as that. I saw a popular Instagrammer post a plain salad with chicken and talk about how she just loves boring meals (no shame, good for her) and while that’s cool – it ain’t me. I don’t like boring food. I want variety, I want flavor, I want spices and depth and deliciousness. And I want it to be healthy. That’s how I came up with this huevos rancheros recipe! Gluten-Free Leftover Turkey and Wild Rice Soup

This gluten-free leftover turkey and wild rice soup is the perfect way to use up the bones and leftover meat from your Thanksgiving turkey! Every Thanksgiving I buy a huge turkey. In years past it’s because I often invite people last minute – people I find don’t have anywhere to go, a last minute guest showing up, and because I want to make sure everyone has enough AND I have leftovers. God I love leftovers. This year is different. This year there is a pandemic and like the experts warned, winter is surging. So it’s just my immediate family and my mother in law. We drove home to DC from Charleston and are having a lil’ Thanksgiving, just three adults and two toddlers. So why the hell did I buy a 17lb turkey? It’s my nature. I feed people even when there aren’t people to feed. And now I have…

Asian Chicken Wings (Gluten-Free, Keto)

These Asian chicken wings are only five ingredients plus they’re gluten-free, keto, paleo and super healthy! Ya’ll. I hate Buffalo sauce. Like it is just NOT good. It’s sour, there is no real depth of flavor, there’s no garlic or onion flavor. And to be honest I’d eat garlic in my pancakes I love it so much. I know everyone loves Buffalo sauce. But I’m not on the Buffalo sauce train. Especially after making these super easy Asian chicken wings, which are SO GOOD. See how beautiful they are? I served this up with some jasmine rice and a side of sautéed bok choy and shiitake mushrooms. Tons of veggies and the whole meal was packed with delicious Asian flavor. I love trying to come up with Asian dishes. They’re just so damn healthy if you use the right ingredients. Health Benefits: This recipe is gluten-free, soy-free, dairy-free, low-carb, paleo,…
