Poached Eggs Over Prosciutto with Pesto

While I’m a big fan of spending time cooking dinner and drinking wine (it relaxes me!), I want my breakfast and lunch to be done in less than 10 minutes. I don’ t have time in the morning to make elaborate meals so the quicker the better. That makes poached eggs a great option. Also, if I’m eating breakfast, it’s usually because I woke up with ravenous hunger. It’s that or I’m not hungry at all so I fast. There’s no in between for me. So yesterday when I woke up ready to eat my cats, I had to think of a quick breakfast option. This fit the bill and was freaking delicious. I think it is what people affectionately refer to as “yolk porn.” Ingredients: 3 slices of prosciutto 2 tbsp pesto (I just blend basil, parsley, pine nuts, garlic and olive oil and keep it in the fridge)…

It’s easily digestible and provides good carbs to help keep you full. I don’t know about you, but I definitely feel fuller when my meal includes some carb action. Why tapioca flour is the best choice for making paleo pizza crust: Tapioca is a type of starch extract that’s derived from a vegetable called cassava root. Added in the right quantity, tapioca flour can add so much structure to baked…

Fermented Bloody Mary

There’s a farm to table restaurant in my neighborhood that I love. As if that’s not awesome enough, they also make amazing bloodies (not the most appetizing nickname for a drink). There’s even an entire menu dedicated to all the different Bloody Mary options. One of the options, and it’s freaking delicious, is pickle juice. I don’t often drink liquor, but I do love me a good Bloody Mary. So I recently decided to make them at home. And then genius hit. I had an almost empty jar of Bubbie’s pickles. I used the fermented pickle juice to make an awesome Bloody, and I made it healthier! I’m all for making healthier versions of cocktails. The pickle juice is loaded with probiotics which makes it a great addition to this classic cocktail.     Fermented Bloody Mary I don’t often drink liquor, but I do love me a good Bloody Mary. So…

Banana Carrot Cake with Coconut Frosting

I recently saw a recipe for a “healthy” banana carrot cake. Unfortunately, the ingredients consisted of wheat, sugar, canola oil and low-fat cream cheese. Somehow this was being classified as healthy. This ain’t the 80s! Low-fat does not equate to health! So I decided to make my own. And thank God I got a picture of it, because immediately after I set it down on my counter, my cat did this: Thanks, Sadie. You’re a pal. Healthy Banana Carrot Cake with Coconut Butter Frosting Most healthy cake recipes are not healthy, just fat-free! This is not the 80s, guys! This Banana Carrot Cake is my idea of a healthy cake! Perfect for Easter, Mother’s Day or any special occasion. Cake:1 banana4 medium carrots (peeled and diced)2 eggs1.5 cups almond flour (I use THIS almond flour)1/3 cup honey (find organic, raw honey HERE)1 tbsp vanilla (I like THIS brand)1…

Greek Salad with Homemade Gyro Meat

If you’ve been reading my blog for more than a week or following my Facebook, you probably already know that I’m kind of obsessed with Greek food. No matter what, I know if I’m at a Greek restaurant I can eat well and the food will still be awesome. The Greeks love to use fresh ingredients, they cook with olive oil instead of disgusting, rancid vegetable oils, and it’s easy to order off of the menu without having to make substitutions. I love Greek food so much that I’m even trying to go to Greece for my honeymoon. And while the beaches and culture and architecture are a big part of that… let’s be honest, the biggest part of wanting to go is so that I can eat at least half of the country. I have a normal appetite and don’t tend to overeat, but if we do go to…

Potato Nachos

I’m kind of in love with the white potato. It’s taken a lock of flack over the years; people said it was unhealthy, it didn’t have a good nutrient profile, that it would spike your blood sugar, that it wasn’t as healthy as a sweet potato. You can read my article on white versus sweet potatoes HERE. But the humble white potato will always be my favorite. For all the guff its taken, most of it is unfounded. The white potato isn’t just delicious, it actually is a healthy food! It’s a vegetable after all. It comes from the earth, it has vitamins and minerals, and it’s pretty damn healthy if you’re not frying it in vegetable oil. So I combined my two loves: the white potato and Mexican food. I don’t love corn, and I don’t eat corn. So corn chips were definitely out. And potatoes worked out beautifully.…

Cheesy Prosciutto Wrapped Jalapeños

I’m starting to think I have an obsession with jalapeños. They burn so good.Unfortunately, Scott hates jalapeños. I like my food way spicier than he does. So I really only eat jalapeños on my own. I can’t put them in our dinner or lunches because I make batches and Scott loses his mind whenever jalapeños are present. Anyway, yesterday I was workin’ and felt like snacking. I rarely snack, but sometimes snacks are awesome. Especially when they involve creamy cheese, spicy peppers and salty prosciutto. It’s like the freakin’ trifecta of the perfect snack.     Cheesy Prosciutto Wrapped Jalapeños Sometimes snacks are awesome. This easy healthy Chocolate Mousse recipe is paleo, dairy-free and refined sugar-free and comes together in 5 minutes using only 5 ingredients! Dessert win! Elevate your dessert game with this Healthy Chocolate Mousse recipe!  My husband loves chocolate mousse! It seemed like a simple enough dessert to make. However, it usually involves a double broiler, separating the yolks from the whites, beating the whites, and some chocolate mousse recipes even calling for baking it. I suck at baking. This is why I have to come up with the easiest and quickest desserts possible. And healthy, obviously. I love to cook, but I find baking really boring. I didn’t really think double boiler and beating eggs was necessary to get perfectly silky and smooth chocolate mousse. Turns out, I was right. Why you should try this healthy Chocolate Mousse recipe: This healthy chocolate mousse recipe was the easiest dessert to make…

Strawberry Cupcakes with Lime Frosting

It’s finally warm (ish) in DC and I found some strawberries while at the grocery store so I decided to make these cupcakes. They remind me of a strawberry margarita, which reminds me of summer, which makes me feel like it’s right around the corner. Even though I have several months to go. Last weekend I took these to my friend Joey’s birthday party. Unless all of my friends were just really drunk, they seemed to enjoy the cupcakes. I’d think maybe they were just sparing my feelings, but my friends aren’t like that. So, these taste good even to non-paleo/grain-free people! Easy Strawberry Cupcakes with Lime Frosting These easy cupcakes remind me of a strawberry margarita, which reminds me of summer, which makes me feel like it’s right around the corner Cupcake Ingredients:2 cups whole strawberries (blend them until smooth, a Vitamix is best because it will pulverize the…
