While I’m a big fan of spending time cooking dinner and drinking wine (it relaxes me!), I want my breakfast and lunch to be done in less than 10 minutes.

I don’ t have time in the morning to make elaborate meals so the quicker the better. That makes poached eggs a great option.

Also, if I’m eating breakfast, it’s usually because I woke up with ravenous hunger. It’s that or I’m not hungry at all so I fast. There’s no in between for me.

So yesterday when I woke up ready to eat my cats, I had to think of a quick breakfast option.

This fit the bill and was freaking delicious.

I think it is what people affectionately refer to as “yolk porn.”

Ingredients:

  • 3 slices of prosciutto
  • 2 tbsp pesto (I just blend basil, parsley, pine nuts, garlic and olive oil and keep it in the fridge)
  • 1-2 eggs, poached (I know there are “proper” ways to poach, but I just boil water, drop the eggs in and let them go for three minutes)
Assemble the prosciutto, top with egg, top with pesto.
Done! Easy, delicious and full of protein and healthy fats that will keep you full. This is also a  great breakfast for any practicing a ketogenic diet.

    when you do IF do you eat coconut oil in the morning / put it in your coffee?

    It would be nice to be able to practice IF from time to time because sometimes I am not hungry in the morning but my adrenals are not working properly so I guess that I need to heal them first .

      I don’t drink coffee so I just eat it straight from the spoon in the morning. But I recommend healing your adrenals before practicing IF.
