While I’m a big fan of spending time cooking dinner and drinking wine (it relaxes me!), I want my breakfast and lunch to be done in less than 10 minutes.
I don’ t have time in the morning to make elaborate meals so the quicker the better. That makes poached eggs a great option.
Also, if I’m eating breakfast, it’s usually because I woke up with ravenous hunger. It’s that or I’m not hungry at all so I fast. There’s no in between for me.
So yesterday when I woke up ready to eat my cats, I had to think of a quick breakfast option.
This fit the bill and was freaking delicious.
I think it is what people affectionately refer to as “yolk porn.”
- 3 slices of prosciutto
- 2 tbsp pesto (I just blend basil, parsley, pine nuts, garlic and olive oil and keep it in the fridge)
- 1-2 eggs, poached (I know there are “proper” ways to poach, but I just boil water, drop the eggs in and let them go for three minutes)
