I love dips. There’s something about setting out dips, homemade bread, olives, raw cheese and cured meats that makes me feel very European, and I’m into that. Even though I’ve only been to Europe once. Also, I’d just like to say that I’m so excited for the farmers market to come back next month. My favorite farmer has amazing, gigantic, organic eggplants. Only one more month until that awesome market is back in my life! And eggplants are super healthy. Eggplants contain: vitamin C beta carotene phosphorous potassium magnesium niacin copper thiamin vitamin B6 This dip is super easy to make and goes over well at parties. Kimchi Fried Rice & Eggs
Kimchi rice has quickly become my favorite post-workout meal. It’s full of healthy fats, probiotics, protein, veggies, and glucose. Kimchi is fermented cabbage and spices and it’s the national dish of Korea. Some Korean homes even have a separate fridge just to store kimchi. I learned that on House Hunters International. It’s quick and easy to prepare for a post-workout recovery, too. At the beginning of each week I make a batch of white rice (you can read about why I eat white rice here) so this really only takes a few minutes to throw together. Vanilla Salted Caramel Cups
I’m not a huge chocolate fan. Or a caramel cups fan… most of the time. I know it’s nuts but chocolate just doesn’t really do it for me. I much prefer vanilla, and I love vanilla with caramel. Jalapeño Cilantro Deviled Eggs
I’m obsessed with deviled eggs. They are freaking delicious and make the best snacks! Plus, eggs are rich in vitamins A, E, D and K, choline and the beneficial omega-3 fatty acids, EPA and DHA. They’re basically multivitamins, ones that you can actually absorb and easily digest. These are also perfect for parties. You don’t have to add the jalapeño ring on top, but I am in love with spicy food so I of course do. The creaminess of the yolk and mayo pair perfectly with the cilantro and jalapeño. It’s unbelievably good. Jalapeno Cilantro Deviled Eggs I’m obsessed with deviled eggs. Paleo Chicken Nuggets with Sriracha Mayo
Who doesn’t love chicken nuggets?! Especially if you’re a kid. They’re the perfect snack and they’re so easy to make. Unfortunately, a lot of people just pop some Tyson chicken nuggets into the oven and call it a day. I mean, their commercials say it’s healthy, so it is right? Wrong. Tyson chicken nuggets come from birds fed GMOs. And the ingredients aren’t so stellar either. Chicken, water, salt, and natural flavor. BREADED WITH: Wheat flour, water, wheat starch, white whole wheat flour, salt, contains 2% or less of the following: yellow corn flour, corn starch, dried onion, dried garlic, dried yeast, brown sugar, extractives of paprika, and spices. Breading set in vegetable oil. Gluten, vegetable oil and GMOs galore. Lucky for you my chicken nuggets are super easy to make and only take a few minutes. Philly Cheesesteak Casserole
One time Scott and I took a day trip to Philly just so I could get a grass-fed Philly cheesesteak and go to a bakery we like. I didn’t eat the sub roll, but holy hell does a Philly cheesesteak do a person good. But I crave them about once a month. It’s not always realistic to drop everything and drive to Philadelphia (although it’s definitely fun to do and I highly recommend it). Anyway, I was craving a Philly cheesesteak like crazy last week. I didn’t want to go out and buy one made of CAFO cow and wrapped in a tub of gluten. So I figured I could just make my own version, and it was freaking delicious. Philly Cheesesteak Casserole Philly Cheesesteak Casserole is all about the best parts of a philly cheesesteak sandwich. Have it all together, as a perfect dinner dish! 1 green…
Easy Banana Bread (Grain, Dairy & Nut Free)
Not only is this bread gluten and grain free, it doesn’t have any dairy, nuts or added sweeteners. This makes it a safe option for breakfast or great as a quick and filling snack that won’t weigh you down or spike your blood sugar. It took about 5 minutes to throw together and 30 minutes in the oven, making this one of the easiest desserts ever (which I like). Just goes to show you don’t need to spend a lot of time in the kitchen to make tasty treats that are also healthy. It really couldn’t be easier, and you can freeze it too! Greek Goat Cheese Stuffed Mushrooms
Greek food is my favorite food. Dill and oregano are two of my favorite spices and they work really well in these stuffed ‘shrooms, but feel free to add or omit any spices. You can also use feta cheese instead of goat cheese, which was my plan until I realized I didn’t have any feta. I also added red pepper flakes, because I’m obsessed with all things spicy. Liver Stuffed Bacon Wrapped Jalapeños
Let’s be honest, most people think liver is disgusting. The truth is that liver is pretty delicious, especially if you make it right. One of the best meals I ever had included duck liver pate and holy hell was it amazing. Most people also don’t realize that liver is the most nutritious food on earth. Yup, you read that right. More nutrient dense than “super foods” like chia seeds or goji berries, more nutrient dense than broccoli, more nutrient dense that kale. See this chart I made: Kale (100 g) Beef Liver (100 g) Iron 1.47 (non-heme) 4.90 Phosphorous 92 387 Zinc 0.56 4 Niacin 1 13.175 Folate 141 290 B6 0.271 1.083 B12 0 59.30 Vitamin A (retinol) 500 (has to be converted) 4968 Vitamin D 0 49 Liver is a nutritional powerhouse! Which is why instead of taking a multivitamin, I recommend eating liver; or at least taking…
