Gluten-Free Creamy Wild Rice and Chicken Soup

It’s soup season ya’ll! And this Gluten-Free Creamy Wild Rice and Chicken Soup is perfect for these colder months and darker days! I get very into soup when cold weather rolls in. I mean, to be fair, I now live in Charleston, SC where “cold” weather is like, 55 degrees. Which works out very well for me, since I hate being cold. But I still love to snuggle up to a dining room table with my family and just chat while our Christmas tree sparkles in the background – while eating soup. It’s so damn homey. Health benefits of this Gluten-Free Creamy Wild Rice and Chicken Soup: packed with protein from the chickenmade with homemade bone broth (recipe HERE), this soup is very healing for the gutboosts the immune system via the broth, veggies, adequate protein, fiber and garlic (all of which also benefit gut health)rich in antioxidants from the…

Cranberry Christmas Margarita

I will not let my love of margaritas be limited to Cinco de Mayo, taco nights and summertime. Margaritas are a year-round treat, people! And this crazy good cranberry Christmas margarita is proof of that! There are only two types of alcohol I drink: wine and tequila. I love my wine, particularly with a delicious meal. Or better yet, oysters. A crisp glass of sauvignon blanc with a delicious oyster is one of my favorite treats ever. But a margarita is so fun, so festive. And while most people think a margarita is more appropriate for tacos, for summertime and/or Cinco de Mayo – margaritas are actually super versatile. Plus, they don’t give you a hangover like beer or wine and certainly not like brown liquor would. So back to this margarita. I made it and sat by my tree and sipped it while my sons and husband played. It…

The BEST Gluten-Free Cinnamon Rolls

These are absolutely the BEST gluten-free cinnamon rolls! I’ve been making cinnamon rolls every Christmas morning for ten years and this is by far the best recipe I’ve tried! I feel like there is nothing I can say that will accurately do this recipe justice. But I still have so much to say about this recipe. First, I am not a sweets person. 10 out of 10 times, I’ll order a glass of wine instead of dessert. I’ll take chicken liver over chocolate any day. But cinnamon rolls are one of my weaknesses. I have always loved them – the gooeyness in particular. The gooey frosting, the gooey cinnamon center, the gooey dough. I now realize gooey is a gross word so I’m going to stop using it now. But do you SEE the gooey cinnamon caramel on the bottom? Something about the combo of butter, coconut sugar and cinnamon…

Gluten-Free Leftover Turkey and Wild Rice Soup

This gluten-free leftover turkey and wild rice soup is the perfect way to use up the bones and leftover meat from your Thanksgiving turkey! Every Thanksgiving I buy a huge turkey. In years past it’s because I often invite people last minute – people I find don’t have anywhere to go, a last minute guest showing up, and because I want to make sure everyone has enough AND I have leftovers. God I love leftovers. This year is different. This year there is a pandemic and like the experts warned, winter is surging. So it’s just my immediate family and my mother in law. We drove home to DC from Charleston and are having a lil’ Thanksgiving, just three adults and two toddlers. So why the hell did I buy a 17lb turkey? It’s my nature. I feed people even when there aren’t people to feed. And now I have…

Why I Started Therapy

I always want to be transparent with my readers and I want to tell you guys that I started therapy. I’m actually in a really good place. Anxiety is minimal, intrusive thoughts (almost all stemming from past trauma) are infrequent and I’m really happy. I thought it was the perfect time to start therapy. Here’s why. For those of you who don’t know, I had a less than conventional childhood. My mother was a physically, verbally and mentally abusive drug addict. In my first therapy session, when the doctor was asking basic questions about my life, I found myself recounting some of the following: everyone in my immediate family is/was a drug addictI often went hungry as a childI was neglected, abused and shown next to no loveI overdosed twice as a teen on pills my mother gave meshe started kicking me out of the house at 14, then calling…

Asian Chicken Wings (Gluten-Free, Keto)

These Asian chicken wings are only five ingredients plus they’re gluten-free, keto, paleo and super healthy! Ya’ll. I hate Buffalo sauce. Like it is just NOT good. It’s sour, there is no real depth of flavor, there’s no garlic or onion flavor. And to be honest I’d eat garlic in my pancakes I love it so much. I know everyone loves Buffalo sauce. But I’m not on the Buffalo sauce train. Especially after making these super easy Asian chicken wings, which are SO GOOD. See how beautiful they are? I served this up with some jasmine rice and a side of sautéed bok choy and shiitake mushrooms. Tons of veggies and the whole meal was packed with delicious Asian flavor. I love trying to come up with Asian dishes. They’re just so damn healthy if you use the right ingredients. Health Benefits: This recipe is gluten-free, soy-free, dairy-free, low-carb, paleo,…

Apple Cider Vinegar Margarita

You guys. I love margaritas. And this paleo apple cider vinegar margarita is the perfect drink this fall! I made this margarita on Saturday for Halloween. If you’re wondering what I was for Halloween, the answer is RBG. See below. I went to Goodwill about four hours before the start of trick or treating and managed to pull this together. Not the best, because I am NOT crafty. But people knew who I was, so I’ll take it. Also I just moved to the south so I had to rep, you know? Anyway. I made this paleo apple cider vinegar margarita before we hopped on the golf cart and took the kids trick or treating. I like alcohol, not too much and definitely not with a lot of sugar. I drink maybe once during the week (a glass of wine or something if we go out) and then Friday/Saturday on…

Easy Green Chicken Enchiladas (Gluten-Free, Paleo)

These easy green chicken enchiladas are gluten-free, paleo and low carb too! They come together quickly thanks to rotisserie chicken and a paleo enchilada sauce! Tuesdays are always a bit busy for me. I work until 3, then I entertain my kids, then around 4:30 we go to the farmers market, then I rush home to make dinner. The exception being last Tuesday. Because I prepped these enchiladas like a BOSS. You guys, this is not a from scratch meal. It is quick, it is healthy, but it is not involved. You mostly assemble. Because I’m a freaking mom and even if you’re not a mom I know you get busy and you want to make healthy meals that don’t require 13 ingredients and four hours. So make this. It’s healthy. It’s low-carb and gluten-free. It’s paleo (ish, we’ll talk about that later). I served it with a quick side…
