Asian Ground Chicken Bowl (Paleo, Gluten-Free, Keto Option)

This Asian Ground Chicken Bowl is easy to make, paleo, gluten-free and has a keto option. Also it’s crazy good, ya’ll. The other day I was thinking of what to make for dinner. I had gotten up at 5am to go to a Yoga Sculpt class (basically yoga with cardio and weight and it kicks your ass). Then I worked until 3pm. Then I took my kids on a walk, went to the park, changed two diapers and chased my kids while they sped away from me on scooters. It was roughly 5:13pm and I thought, “Well shit I’m tired and really don’t feel like making dinner.” Then I strongly considered ordering Chipotle. But then I remember I had ground chicken in the fridge. And ground chicken is EASY. It’s versatile, it cooks up in a matter of minutes and it fully absorbs whatever sauce you add – making saucy…

How I Shrank My Thyroid Nodules Naturally

I recently developed two huge thyroid nodules. After reading everything I could on the subject and seeing functional medicine doctors, here’s how I shrank my thyroid nodule naturally. About two months into quarantine, after not going to the grocery store, eating out, seeing friends or family and spending all day, everyday with my kids alone – I found myself sitting down to feed them and feeling a huge lump in my neck. It was right at the base of my thyroid and it seemed to have popped up overnight. I kept running my fingers over my neck, wondering what the hell this foreign and gigantic object was. Had my thyroid swollen to a million times its size? Was it a cyst? And worst of all, could it be the big C? You can see how huge my thyroid was in the video below. https://youtu.be/t2DrLEK3uM4 When this happened, we were deep…

Pumpkin Pecan Cobbler (Paleo, Gluten-Free)

This pumpkin pecan cobbler is paleo, gluten-free, totally delicious and perfect for fall! I have a confession to make: I kind of hate pumpkin. I don’t like pumpkin pie. I don’t drink pumpkin spice lattes. And I don’t add pumpkin to my daily smoothie once August 15th rolls around and the cans show up in Whole Foods. But every year I’m determined to make a pumpkin dessert that I actually enjoy consuming. This might be that. First, mix your pumpkin, sugar and eggs together. For this round I made pumpkin bars (see below), but if you’re just doing cobbler, omit flour. Spread it on the bottom of a parchment lined pan. Melt the butter, sugar and pecans. Top the pumpkin with the pecans and bake! Top with ice cream! I looove pecans so I figured adding some caramelized pecans on top wouldn’t hurt. Bonus: they totally made this dish. And…

An Unbiased Review of All In by Teddi Mellencamp

After seeing some emerging details about this program, I’m totally horrified that women are investing thousands in such a dangerous program. So here is an unbiased review of All In by Teddi Mellencamp. Listen, I watch Housewives. Beverly Hills is not and has never been at the top of my list. Let’s be honest, they just can’t keep up with New York. Last night I got sucked into Emily Gellis Lande’s Instagram about All In by Teddi Mellencamp. I wasn’t familiar with the program and I was shocked to see so many women sharing horror stories. My shock turned to anger when I saw that Teddi is now promoting her program for postpartum mothers. As a mother myself, that anyone would promote this starvation diet to a woman in her most vulnerable time is sickening. For the record, I have some several unbiased reviews on various programs, meal replacements and…

The Best and Worst of Beautycounter Makeup

I want to share some my honest opinion on Beautycounter products, the best and worst of Beautycounter makeup. Sometimes it can be hard to get a person’s true opinion on the products they’re slinging. It’s almost as if people think if they say they don’t like one product, they’re disparaging the entire line. Listen, we’re all different, with different skin types, needs and desires. When I first started buying Beautycounter products, I loved some and I didn’t love others. In fact I thought some were really bad. It’s aways my goal to be completely honest and transparent with you guys, so today I’m going to share the best and worst of Beautycounter makeup. What I thought made me look like a glowing goddess…and what sucked. Let’s start with my favorites. Eyeshadow Palettes Beautycounter has several eye shadow palettes and they’re all great. I actually much prefer to use the darker…

Black Lives Matter – The Unbiased Facts

Amid people I previously considered friends, colleagues and generally decent human beings sharing the despicable Candace Owens video and articles on how black people aren’t actually marginalized or how they don’t really experience police brutality, I thought it was time I speak out and lay down the unbiased facts. While my background is in nutrition, I have based my career on evidence. On history. I have never relied solely on studies, trends or anecdotal data to draw conclusions. I rely on a combination of all of these things; as well as chronicles of the past, what has and has not proven effective for generations, mixed in with sound scientific data. I like to attack ideas from all angles prior to making a decision. And I’m good at it. I think it’s time I take this outside of the realm of nutrition and apply it to the systemic racism and extremely…

Easy Chicken and Veggie Green Curry (Paleo, Keto, Gluten-Free)

This easy chicken and veggie green curry is paleo, keto, gluten-free and crazy good. It’s perfect for meal prep and tastes better the next day! I’ve been craving warmer, spicier dishes lately. Maybe it’s because fall has already seemingly visited DC and it’s only August. It’s raining consistently and it’s often in the 60s. I’m not ready for it because I’m a summer lover through and through, but I do love a big bowl of warm, spicy, flavorful curry. I got some really beautiful Asian eggplant from the farmers market and paired it with eggplant I grew in my backyard. I LOVE eggplant. You can add any veggies you like. Bell peppers and shiitake mushrooms would be brilliant in this dish. I found half a bag of broccoli, cauliflower and carrot mix in my freezer, so I tossed that in. Then I topped with 1lb of chicken breasts from my…

Gluten-Free Summer Shrimp Pasta

This gluten-free summer shrimp pasta is the perfect special meal to jazz up a boring weeknight – plus it’s crazy good. I made this pasta last Tuesday and all of my boys ate it up. Husband went back for thirds and both little dudes had seconds, topped with lots of parmesan of course. Those kids freaking love cheese. For this recipe I used fresh summer herbs from my garden, the sweetest cherry tomatoes and honestly – organic frozen corn. It’s just easier. I could buy fresh corn from the market and cut it off the cob and all that, and you’re welcome to, but I didn’t. And it was still perfect and summery and delicious. Corn is like little kernels of delicious summer treats. My kids scarf down whatever I make as long as corn is present. Tips for this recipe: Save the juice after you cook the corn and…

Greek Chicken Kebabs Recipe (Paleo, Gluten-Free, Keto)

This Greek Chicken Kebabs Recipe features an easy fragrant herb & olive oil marinade, and charred veggies threaded between the juicy grilled chicken pieces! Low Carb, Keto, Paleo & Gluten-free. I could eat Greek food all day every day no problem. I love those bold, fresh, herby flavors and the fact that it is healthy but still tastes so flavorful. This Greek Chicken Kabobs recipe is one I have made a lot lately, especially since we started a weekly date night. Every Friday we make something that’s traditional in another country and if it were up to me, I would alternate between Mexico (hello, steak tacos and margaritas) and Greece. My favorite culinary destinations. This Greek Chicken Kebab recipe will save bbq season! As much as I love grilled chicken, let’s just admit that chicken breasts can be a little problematic. They can easily get dry and overcook within minutes, especially…

Summer Pasta Salad (Gluten-Free, Dairy Free)

This summer pasta salad is gluten-free, dairy free, easy to throw together and insanely delicious! It’s the perfect side dish for summer and goes great at a cookout or barbecue! I think I’ve come up with the most perfect pasta salad. Truth be told, I make a lot of pasta salad. It’s my summer staple. Anytime we’re invited to a cookout or if we’re hosting one, my husband inevitably says, “What are you making? Let me guess. It is f*cking pasta salad again?!” Don’t let him fool you. We love pasta salad. And he normally eats most of it. Also don’t be deterred by the f word. We think it’s funny to jab each other and have been doing so for nearly ten years. This is an Italian style pasta salad, minus the Italian dressing. Trust me, fresh herbs and good olive oil are SO MUCH BETTER. I like to…
