Five Ingredient & Five Minute Chocolate Mousse

This easy healthy Chocolate Mousse recipe is paleo, dairy-free and refined sugar-free and comes together in 5 minutes using only 5 ingredients! Dessert win! Elevate your dessert game with this Healthy Chocolate Mousse recipe!  My husband loves chocolate mousse! It seemed like a simple enough dessert to make. However, it usually involves a double broiler, separating the yolks from the whites, beating the whites, and some chocolate mousse recipes even calling for baking it. I suck at baking. This is why I have to come up with the easiest and quickest desserts possible. And healthy, obviously. I love to cook, but I find baking really boring. I didn’t really think double boiler and beating eggs was necessary to get perfectly silky and smooth chocolate mousse. Turns out, I was right. Why you should try this healthy Chocolate Mousse recipe: This healthy chocolate mousse recipe was the easiest dessert to make…

Strawberry Cupcakes with Lime Frosting

It’s finally warm (ish) in DC and I found some strawberries while at the grocery store so I decided to make these cupcakes. They remind me of a strawberry margarita, which reminds me of summer, which makes me feel like it’s right around the corner. Even though I have several months to go. Last weekend I took these to my friend Joey’s birthday party. Unless all of my friends were just really drunk, they seemed to enjoy the cupcakes. I’d think maybe they were just sparing my feelings, but my friends aren’t like that. So, these taste good even to non-paleo/grain-free people! Easy Strawberry Cupcakes with Lime Frosting These easy cupcakes remind me of a strawberry margarita, which reminds me of summer, which makes me feel like it’s right around the corner Cupcake Ingredients:2 cups whole strawberries (blend them until smooth, a Vitamix is best because it will pulverize the…

Vanilla Salted Caramel Cups

I’m not a huge chocolate fan. Or a caramel cups fan… most of the time. I know it’s nuts but chocolate just doesn’t really do it for me. I much prefer vanilla, and I love vanilla with caramel. These make great candies and are the perfect little treat. Caramel recipe HERE. Vanilla Salted Caramel Cups These vegan and paleo Salted Caramel Cups make great candies and are the perfect healthy little treat. 2 cups cashews (I buy THIS brand)1/2 cup maple syrup (I buy THIS brand)1/2 cup coconut oil (melted (I buy expeller pressed, it has no coconut flavor))1 tbsp vanilla (I buy THIS brand) Soak the cashews overnight in filtered water.Drain the cashews and add them to a blender with all of the other ingredients. You will need a strong blender for this, like a Vitamix.Pour the mixture equally into 8 cupcake tins.Add to the fridge and make the caramel…

Easy Banana Bread (Grain, Dairy & Nut Free)

Not only is this bread gluten and grain free, it doesn’t have any dairy, nuts or added sweeteners. This makes it a safe option for breakfast or great as a quick and filling snack that won’t weigh you down or spike your blood sugar. It took about 5 minutes to throw together and 30 minutes in the oven, making this one of the easiest desserts ever (which I like). Just goes to show you don’t need to spend a lot of time in the kitchen to make tasty treats that are also healthy. It really couldn’t be easier, and you can freeze it too!   Easy Grain-free Banana Bread Not only is this banana bread gluten and grain free, it doesn’t have any dairy, nuts or added sweeteners. This makes it a safe option for breakfast or great as a quick and filling snack that won’t weigh you down or spike…

Flourless Chocolate Cake With Caramel Sauce

Scott and I are currently snowed in. DC kind of shuts down after 2-3 inches of snow so now that we’re at 4-5 inches, the city is dead. We’re holed up here with our cats and this flourless chocolate cake. Scott has already had two pieces for breakfast, so I’d say it’s definitely dude-approved. Last weekend we went to a restaurant in Annapolis that apparently had the most amazing flourless chocolate cake. I know this because I heard people talking about it when I was eavesdropping on their conversation (what? Like you don’t do that in restaurants?). I wasn’t in the mood for sweets, and knew it would be full of sugar and other questionable ingredients so I didn’t order it and figured I could make it myself at home. It’s already flourless so I didn’t have to worry about the gluten component, but most recipes called for sugar and…

5 Minute Paleo Chocolate Pudding

I’m not even a huge chocolate fan and I L-O-V-E-D this pudding. And I hate coffee, but it had almost a mocha taste that I thought was really good, most likely because I also added a bit of almond extract. But if you don’t have almond extract, no worries, it still tastes great without it. Another thing I like about this dessert is that it is so easy to make, you can make in bulk, and it requires no baking. I am not a good baker. I hate measuring out every single ingredient. I want to do my own thang. Luckily, you can mix it up with this pudding. Add berries, add banana, add whipped cream. GO CRAZY! 5 Minute Paleo Chocolate Pudding I’m not even a huge chocolate fan and I L-O-V-E-D this easy paleo chocolate pudding. And I hate coffee, but it had almost a mocha taste that…

Almond Blackberry Cake with Coconut Frosting (Nut & Dairy Free)

Even if you get a gluten-free cake, it’s still full of sketchy ingredients. So I decided to make my own. And it turned out AWESOME. I have to say that the clear star of this cake is the frosting. I’m in LOVE. I don’t normally love coconut, but it’s super creamy from the coconut and it just tastes amazing. I think it’s my favorite frosting ever, including the frosting that is made out of 5 pounds of powdered sugar. It’s that good. Easy Banana Pudding (Paleo & Dairy-Free)

I remember the first time I ever had banana pudding. I was in the hospital and I thought it was the best thing I ever tasted. It was bright yellow. Probably from toxic food dye. But you don’t think about that when you’re 7. After making my easy 5-minute paleo pudding last week, I was stoked to make more. I mean, it’s the easiest dessert I’ve ever made and you can customize it a million different ways, which is why I plan on making chocolate pudding later today. I topped it with whipped coconut cream (you just blend the thick part of coconut milk with some honey) but I whipped it really quick because I was being impatient and it fell. I’m not good at being patient when the pudding is involved.   Paleo & Dairy Free Banana Pudding This paleo banana pudding must be the easiest dessert I’ve ever…

5 Minute Paleo Pudding

This is easily the quickest and simplest dessert I’ve ever made. On top of that, it’s full of healthy fat from the coconut milk. I know people love decadent, chocolatey, fancy desserts, but the good news about this pudding is that it can be used as a base for any flavor you want, and can even be used for pie filling. It’s versatile like that. Want chocolate pudding? Add a half cup of raw cacao. Want raspberry pudding? Just puree the raspberries and add ’em right in. Want banana pudding? Mash up some banana is stir it in. You can also make these in bulk and put them in the freezer. Thaw when you want a sweet snack that won’t spike your blood sugar. Ingredients: 1 can coconut milk 1/4 cup honey (more if you like a sweeter pudding) 1 tbsp gelatin 1 tbsp vanilla Directions: Heat the coconut milk over…

The Best Fudgy Paleo Brownies

I have a confession: I like vanilla more than chocolate. I know, I’m one of those rare unicorns, because my friends and boyfriend constantly remind me how superior chocolate is over vanilla. I get it, chocolate is delicious. I really, really like it. But I’d take a vanilla cake with vanilla frosting over chocolate any day. Except for today. Because I made some seriously delicious brownies. And they’re paleo brownies, to boot. I’m not a fan of most brownie recipes because they just taste like boring old chocolate cake to me. “Why would I eat this, when I could be eating vanilla cake?” I wonder. But gooey, dense, dark chocolate brownies are a different ballpark. These are definitely more dense than the average brownie, and that’s exactly why I like them. It’s almost a cross between fudge and brownie, and I am really into that combo. Plus, like all of my…
