I remember the first time I ever had banana pudding.

I was in the hospital and I thought it was the best thing I ever tasted. It was bright yellow.

Probably from toxic food dye. But you don’t think about that when you’re 7.

After making my easy 5-minute paleo pudding last week, I was stoked to make more. I mean, it’s the easiest dessert I’ve ever made and you can customize it a million different ways, which is why I plan on making chocolate pudding later today.

pudd-1024x964I topped it with whipped coconut cream (you just blend the thick part of coconut milk with some honey) but I whipped it really quick because I was being impatient and it fell.

I’m not good at being patient when the pudding is involved.

Paleo & Dairy Free Banana Pudding

This paleo banana pudding must be the easiest dessert I’ve ever made and you can customize it a million different ways. Add some cocoa powder for a chocolatey version.

Ingredients
  

  • 1 can coconut milk buy organic and BPA-free! Like this brand
  • 1 tbsp gelatin
  • 1/4 cup water
  • 2 tbsp raw honey
  • 1 banana
  • 1 tbsp vanilla

Instructions
 

  • Heat the coconut milk over medium heat.
  • Dissolve the gelatin into the water.
  • Slowly add the gelatin to the coconut milk.
  • Add the raw honey and vanilla.
  • Mash the banana and add it in, or throw all of it in a blender.
  • Chill for at least an hour.

Notes

Add some cocoa powder for a chocolate version.

          The gelatin doesn’t make it chunky unless you aren’t dissolving it in water first. Are you not mashing the banana well enough maybe?

            Yes, I would try with half tbsp.

  2. So I made this and it’s too smooth and not in the pudding consistency. How long am I supposed to heat the coconut milk plus other ingredients? Thanks

      Did you refrigerate for hours? Just until it dissolves.

      Until the gelatin dissolves. Did you then refrigerate it?
