Basil Marinated Salmon

Yesterday I posted a recipe for basil dressing and marinade. Today I’ll show you how I like to use it. The dressing doubles as a marinade and is perfect for fish, chicken and shrimp (it’s also good drizzle over steak). I placed a piece of salmon in tin foil, poured on some basil dressing and marinated it for about an hour. I then placed it in the oven for about 12 minutes on 400. It was awesome. Basil Dressing and Marinade
Did you know that majority of salad dressings and marinades are full of toxic industrial oils? Even the organic varieties are made with soy, canola and corn oils. These are some of the most toxic ingredients in modern diets. Making your own dressing and marinade is not only healthier, it’s cheaper! I spend five or six bucks on organic, olive oil based dressings at the grocery store. Or I spend like, thirty seven cents to make my own. Plus, mine tastes better. Basil Dressing and Marinade This easy basil dressing with fresh lemon juice and healthy olive oil will elevate every salad to a higher level! 10 basil leaves2 cups olive oil1-2 garlic clovesjuice of 1 lemondash of red pepper flakes (optional)sea salt and pepper (to taste) Combine all ingredients in a blender.Puree until smooth.Put it on everythang. What I Ate Wednesday
Breakfast As usual, I wasn’t hungry. There is literally no reason to force yourself to eat in the morning if you’re not hungry. So, I drank some water mixed with kombucha and had 1 tbsp of coconut oil. Lunch Lunch was a tomato, mozzarella, romaine salad with my homemade basil dressing (recipe coming soon!). Even Scott loved it (that man is picky). I also had two grass-fed/sugar-free/non-toxic hot dogs with organic ketchup. Dinner I was craving two things: my paleo pad Thai and my recipe for PF Chang’s orange peel shrimp. Except, I am out of shrimp. So I made it with chicken. It was just as good.

I love pad Thai. It’s one of my favorite Thai dishes. Unfortunately, it’s usually made with vegetable oils, sugar and MSG, or as I like to call it, a cancer cocktail. Is Your Gum Toxic?
Because most gum is. Not a lot of people consider gum to be a major source of junk or toxins in their diet, but the reality is that majority of gum is filled with aspartame, soy, preservatives and other sketchy ingredients. To top it off, gum often contain GMOs as well. While it may not seem significant because gum is tiny and not an actual food, consider how many times you chew gum. What I Ate Wednesday
After finding out that I’m a health coach, people usually ask, “So….what do you eat?” Which is a pretty loaded question. So I’ll share with you what I ate yesterday, even though I’m calling this “What I Ate Wednesday.” Can’t beat that alliteration. Breakfast Normally I fast to promote autophogy, and because I’m just not hungry at seven in the morning. I always have 1 tbsp of coconut oil, lemon water and I’ll sip on green and milk thistle tea throughout the morning. I was feeling hungry though, so I had two pieces of pastured, local bacon. I get it at the farmers market outside of my building. It’s the best bacon I’ve ever had. Lunch Leftovers! I had some leftover cauliflower rice that was sauteed with peppers and onions.
