Scallops Over Cauliflower Puree

I love serving these scallops over cauliflower puree! Some people also call it cauliflower mash. Call it whatever you want. Just steam cauliflower until soft, put it in the blender with a shit ton of butter, puree until smooth. Boom. I don’t usually buy scallops because they’re on the pricier side. But when I was in my local, organic grocery store, these were marked down because the day I was shopping also happened to be the “sell by” date for these babies. They were only $2.50! How awesome is that. Tomato Scallops on Cauliflower Puree Served on cauliflower puree these tomato-y pan-fried scallops make for the perfect low-carb lunch or appetizer! 6 sea scallops2 tbsp butter1 small tomato (I got mine from the farmers market, summer 'maters are too good)1 tbsp fresh parsley (chopped)1 garlic clove garlic (minced) Dice the tomato and saute in the butter.Add the scallops. Paleo Thai Green Curry With Cod

A Thai place opened up in my ‘hood a few months ago and it was there that I discovered that green curry is the bomb. Thank god I figured out how to make this at home. Although it doesn’t look that green due to the amount of hot sauce I put in it. I can’t help myself. Paleo Thai Green Curry With Cod This easy paleo green fish curry tastes just like the ones from your favorite Thai restaurant! Although it doesn’t look that green due to the amount of hot sauce I put in it. While the curry simmers we bake the cod in the oven to cook it to perfection! 1 can coconut milk3 tbsp Thai green curry1 tbsp butter1 garlic clove2 tbsp sriracha (you can omit if you don't like spicy food, although that's weird)1 cup peas2 cups broccoli1.5 cups peppers (I used organic, frozen, mixed peppers)1 cod…

Fancy Appetizer: Smoked Salmon Tater Rounds

Sometimes, I like to make fancy appetizers… for myself. I got the idea to makes these a couple of weeks ago, and then a few days ago I realized I had all of the necessary ingredients. So I made them, and proceeded to eat them all in one sitting, all by myself. I really love these ingredients. Potatoes, sour cream, and smoked salmon? So good! I just realized that I’ve literally made these three days in a row. They’re that good. Eat it all like me, or be normal and share with people. Basil Marinated Salmon

*THERE IS A TYPO IN THIS PICTURE. IT’S SUPPOSED TO SAY “BASIL MARINATED SALMON WITH BASIL SALAD DRESSING.” I’M LEAVING IT AS IT BECAUSE I THINK IT’S FUNNY. Yesterday I posted a recipe for basil dressing and marinade. Today I’ll show you how I like to use it. The dressing doubles as a marinade and is perfect for fish, chicken and shrimp (it’s also good drizzle over steak). I placed a piece of salmon in tin foil, poured on some basil dressing and marinated it for about an hour. I then placed it in the oven for about 12 minutes on 400. It was awesome. I also served it with salad (with basil dressing). And a half of an avocado…drizzles with basil dressing. I could bathe in basil. Which is good because basil has been shown to: have anti bacterial properties be high in vitamin K reduce inflammation soothe the…

Smoked Salmon Eggs Benedict with Dill Hollandaise (Paleo, Primal, GAPS, PHD)

I love eggs benedict. Anytime I go to brunch, which is kind of a lot because brunch is awesome, I always get eggs benedict without the English muffin. Unfortunately, it’s not very filling without the English muffin; so I always ask for a third egg…and extra hollandaise (love that shit). So I’m not only asking for a modified order with no muffin, I’m also asking for an extra egg and extra hollandaise sauce. Yes, I am that girl. I always apologize in advance for my complicated orders. I assumed EB was hard to make due to the hollandaise sauce. Turns out, it’s actually really easy. When you make it my way at least. I don’t know about other people but I imagine they’re less efficient. Hello, lover. Shrimp Summer Rolls

I love white rice. It’s low in phytic acid, easier to digest than brown rice, and a great form of glucose. Summer rolls are a traditional Asian appetizer that usually come with shrimp and pork, or for a vegetarian version, the dreaded tofu. I just used shrimp for mine. I love making these, and they do really well at parties. These can be served with coconut aminos, or if you eat soy, gluten-free soy sauce (tamari) Shrimp Summer Rolls Summer rolls are a traditional Asian appetizer that usually come with shrimp and pork, or for a vegetarian version, the dreaded tofu. Mussels Build Muscles

Shellfish in general and mussels, in particular, are extremely nutrient dense. They have been cultivated for roughly 800 years and have been consumed by humans for over 20,000. Mussels are high in B vitamins, specifically B12, as well as iron, zinc, manganese, selenium and phosphorous. They are high in omegas 3 fatty acids and low in omega 6, ensuring a good ratio against inflammation. They are also an excellent source of protein. Peep this chart from Canadian Cove: *Granted, the nutrient density of pastured beef and poultry are better than the stats above. You get the picture. I’d also like to point out that mussels are extremely cheap. I got an entire lb for $4 from Whole Foods. I like to take them all out and eat this like soup.
