I often get asked what I eat for breakfast or if I have any advice on diversifying someone’s breakfast menu. The truth is, I almost always eat eggs for breakfast. Kimchi rice has quickly become my favorite post-workout meal. It’s full of healthy fats, probiotics, protein, veggies, and glucose. Simple food is the best food. There’s a Mexican restaurant in my neighborhood that’s really good. They are authentic, make most of their food from scratch, and are therefore a bit pricey. I always order their spicy Mexican shrimp, which burns my face off because it’s made with a habanero, but I don’t even care. I decided to recreate the recipe at home. Sometimes my best dishes are born from no recipe, no plan, and going into the kitchen just knowing it’s 11am and I haven’t eaten yet and I’m freaking starving. Stuffing is probably my favorite side on Thanksgiving. Here is my gluten-free recipe, no one I’ve served it to has had any idea it’s not full of wheaty-death. Ingredients: 1 lb gluten-free bread (I don’t eat a ton of gf bread, but not is the perfect time to bust it out! I like this one) cut into cubes 6 tbsp butter, plus more for the top of the stuffing 1 large onion, diced 3 stalks celery, diced 2 garlic cloves, minced 3 tbsp dried sage 2 tbsp Trader Joe’s 21 Seasoning Salute (optional, but I love it) 2-3 cups chicken or turkey stock, preferably homemade salt and pepper Directions: Sauté the onionsand celery in butter. I recently had a discussion with a coworker about the nutrient density of oatmeal versus eggs. According to her, oatmeal was filling, healthy, low in fat and much healthier than eggs. A lot of people think this. I was watching Parks and Rec the other day, and Anne ordered oatmeal and fruit instead of eggs because her character is so health conscious. As an aside, if you don’t want that show, you should probably start because it’s awesome. I decided to buy oatmeal (gluten-free of course) to perform an experiment. I rarely eat grains, and when I do it’s simple and easily digestible white rice. I finished the Paleo Snap Challenge and I have to be honest, it wasn’t that difficult. Growing up I was raised by my grandmother and occasionally by my mostly absent mother. My grandmother’s income consisted of social security, which left little money for food; therefore I ate a lot of white bread and margarine sandwiches. By 16 I was living on my own and had hardly any money at all, much less to spend on food. I know what it’s like to be poor. I became really good at creating different meals from the same ingredients, which is something people do in jail, which I learned from a very sketchy roommate I once had.
