Gluten-Free Bridal Shower

Last month was my bridal shower. Since a few of my friends were coming in from out of town, we had it the Saturday before the wedding and went from bridal shower to bachelorette party. My friends know I don’t eat gluten and am more or less obsessed with food, so I’m pretty sure they expected it to be gluten-free. I actually got rave reviews on the food. Sometimes my best dishes are born from no recipe, no plan, and going into the kitchen just knowing it’s 11am and I haven’t eaten yet and I’m freaking starving. Oatmeal Versus Eggs

I recently had a discussion with a coworker about the nutrient density of oatmeal versus eggs. According to her, oatmeal was filling, healthy, low in fat and much healthier than eggs. A lot of people think this. I was watching Parks and Rec the other day, and Anne ordered oatmeal and fruit instead of eggs because her character is so health conscious. As an aside, if you don’t want that show, you should probably start because it’s awesome. I decided to buy oatmeal (gluten-free of course) to perform an experiment. I rarely eat grains, and when I do it’s simple and easily digestible white rice. Then I soaked the oats overnight in raw milk and coconut milk, and I did this in a mini mason jar (which equated to about 1 cup of oats). Paleo Chicken Fried Pork Chops This chicken fried pork chops recipe is an easy weeknight dinner that is paleo and gluten-free! 1 pork chop1 egg1/3 cup almond flour1 tsp garlic powder1 tsp cayennesalt and pepper to taste2 tbsp expeller pressed coconut oil Beat the egg in a large bowl (large enough to dunk a pork chop in).In another large bowl, combine the almond flour, garlic, cayenne and salt.Melt the coconut oil over medium heat.Dip the chop into the egg, then the flour mixture, then the egg again, then the flour mixture again.Cook for about 6 minutes on each side, depending on thickness. Meal Plan Mondays

On Friday night Scott and I had our friends Nick and Tasha over for dinner. I made brushetta with grain-free bread, asparagus, stuffed mushrooms, mashed potatoes and salmon. I made sure to make extra salmon and mashed potatoes because I knew we would eat it throughout the next week (aka this week). On Saturday we went tubing with friends and had a cookout afterward.
