Lately, I’ve been all about making smoothies. Don’t get me wrong – not the smoothies that contain a shit ton of sugar (even if it’s from fruit, three cups of fruit is way too much). Not low fat smoothies either. If you’re not consuming fat with your smoothies, you’re not absorbing the fat-soluble vitamins. I love a good smoothie. The smoothies I’m making are a great way to get extra veggies into your diet. They actually make an awesome snack. I add chlorella, bentonite and diatomaceous earth because I’m planning on getting knocked up in the not so distant future and these are extremely detoxifying. The chlorella removes mercury while the bentonite and diatomaceous earth remove harmful bacteria, yeast, and toxins. Lastly, I also add gelatin, because it’s awesome for the gut, your bones, skin, and cartilage. When I’m in the mood for a smoothie or just want a snack,…
Paleo Immersion Blender Mayonnaise
I’m one of those people that LOVE mayo. Back in the day when I’d actually eat mayo in restaurants, I’d always ask for extra. If I got a BLT, I wanted to bite into and have the mayo drip out. That kinda mayo lover. The sort of gross kind. But I’ve never found a fully healthy store bought mayo without GMOs or refined oils or oils that are super high in omega-6 fatty acids (which leads to inflammation – we want to avoid that). This mayo is full of healthy fats. Egg yolks are rich in vitamins and minerals (especially if you’re pregnant), coconut oil is rich in lauric acid and great for the gut (the expeller presser coconut oil has no coconut flavor), and olive oil is full of vitamin E, antioxidants and a great HDL booster. Even store bought “olive oil mayo” actually contains either soy or canola oils…
Paleo Blueberry Bread Pudding
I’ve really been craving blueberries lately. I got a bunch of bags of frozen bags of organic blueberries at Trader Joe’s and they’re surprisingly delicious. If I’m craving them, I automatically assume that means my body needs some specific nutrient found in blueberries. And who am I to deny what my body needs? So I made paleo blueberry bread pudding. I settled on bread pudding because I wanted something kind of cake-y and kind of bread-y. And because I suck at baking – it’s pretty difficult to f*ck up bread pudding. I mean, it’s just a blob of sweet, gooey bread. I topped mine with raw goat milk but you can use whatever you like. Ice cream would be awesome. Easy Immersion Blender Hollandaise
When thinking of what I’d name this post, the first thing that popped into my head was “HOLLER FOR HOLLANDAISE.” Easy immersion blender hollandaise is probably more appropriate. I’m kind of in love with my new immersion blender. You can make homemade mayo in 20 seconds, and you don’t have to strain your arm slowly pouring olive oil into a blender, hoping that the mayo will thicken (and it rarely does for me). The immersion blender ensures perfect mayo every time. You can also really easily make hollandaise with it. Immersion Blender Hollandaise You will not find an easier and more fool-proof method for making homemade hollandaise than this easy Immersion Blender Hollandaise! This recipe is THE BEST! 2 eggs yolks1/2 cup butter (1 stick)saltjuice of half a lemon Separate the egg whites from egg yolks and add to a large, tall cup. If you order this immersion blender, they’ll…
Paleo Beef Stroganoff
I love me some Russian food. It’s so filling, hearty and healthy. Most recipes of beef stroganoff (or stroganov) call for flour. I’m not down with flour. It’s not nutrient dense but it is inflammatory, so I avoided it altogether to make this version of paleo beef stroganoff. I also didn’t have any wine, but found that soaking the meat in apple cider vinegar beforehand provided that wine flavor. I actually bought a cheap cut of grass-fed beef (skirt steak) which I always find tough. I read that marinated it in apple cider vinegar softens the meat, and it definitely did. I just cut the meat into strips, then covered in ACV and some olive oil. Paleo Beef Stroganoff I love me some Russian food. This easy Paleo Beef Stroganoff is so filling, hearty and healthy. Paleo Buffalo Chicken Deviled Eggs
I used to hate buffalo wing sauce. I did NOT understand why people liked it. Or buffalo wings. I like wings, like garlic wings and Asian wings, but not buffalo wings. Until recently. Something changed. My husband loves buffalo sauce and add it to almost anything. And I started trying it. I ate it more and more. And now I really like it. I still haven’t had buffalo wings, but I had leftover chicken from cooking a whole chicken (I do this weekly and make broth with the carcass). These eggs were SO good. Perfect for the upcoming spring and summer cookouts!
Paleo Pancit
I grew up eating Filipino food because I had Filipino neighbors and went to school with a bunch of Filipino kids. When they would come to school with pancit I’d always try to trade them for my ham sandwich, which never worked. When I went to a Filipino birthday party, you could find me close to the giant bowl of pancit refilling my plate. Because there was always a giant bowl of pancit and I love it. While pancit is traditionally made with rice noodles, I swapped them out for these noodles which are a great source of iodine. Coupled with all the veggies, this is a super healthy meal. You can also make a ton of it at once like I did to eat for lunch throughout the week. Paleo Pancit While pancit is traditionally made with rice noodles, I swapped them out for these noodles which…
Paleo Seafood Stew
This is definitely a fertility meal. Because Scott and I are planning on getting knocked up in the not so distant future, I’ve been trying to create more nutrient-dense meals. Seafood is obviously one of the most nutritious foods. The mussels especially, they contain several B vitamins, namely B12. They’re also rich in selenium and zinc – not to mention that they’re a great and environmentally sound protein source. Gut Healing + Immune Boosting Chicken Soup
I love me some chicken soup, just not the kind you find pre-made in the grocery store. That isn’t real chicken broth and it has literally no medicinal value. It’s not going to help you get over a cold or boost your immune system. In fact, those chicken soups are usually full of sketchy ingredients like MSG, which does no favors to your immune system. This chicken soup is actually homemade. The broth is full of gut-healing collagen along with a ton of vitamins and minerals – the exact nutrients to boost the immune system. Making your own chicken broth is actually really easy, especially if you have a family. Simply buy a whole chicken (preferably organic) and roast it in the oven on 400 for about an hour to an hour and a half. Make sure to put butter under the skin and salt and pepper and maybe drizzle…
Paleo Tomato & Herb Quiche
I kind of hate making breakfast. For the most part, I’m not hungry when I wake up (around 7 or 8) and work until I actually feel the need to eat (around 10 or 11). By that time, I don’t want to actually make breakfast, I kind of just want it to appear in front of me. Which is why I like making quiches or egg casseroles. Making a quiche at the beginning of the week allows me to just pop a piece in the oven on the toast setting for three minutes and be good to go. It makes my life easier and I like that. Plus, Paleo Tomato and Herb Quiche This paleo tomato and herb quiche is loaded with nutrients from the herbs, greens, eggs and tomatoes. 1 batch of paleo pie crust (see notes)1/2 cup milk of choice6 eggs2 tomatoes (sliced)1/2 cup basil1/4 cup dill1/4 cup…
