I’m always trying new ways of incorporating coconut oil into my diet but can’t stand the taste of it when I’m just scooping it out of the jar, chewing it until it melts and swallowing it. Swallowing any oil is tough. It’s just weird and kind of gross. But it’s important to consume coconut oil daily, as it’s great for both the gut and metabolism. Coconut oil is high in  medium chain triglycerides (MCTs) that boost the metabolism. Studies have shown that when people replace fats with MCTs, they burn more calories. What’s especially interesting about the fats in coconut oil is that the body doesn’t store it as fat but uses it for energy. I always think those Greek salads made with orzo or quinoa look really good. The problem is that I don’t eat orzo or quinoa. I could make this with rice, as I do eat white rice. But now that Trader Joe’s sells organic riced cauliflower, I’m basically obsessed. I bought six bags last week. It’s just me and my husband. I don’t need six bags of riced cauliflower. Superfood Deviled Eggs

Deviled eggs are one of my favorite snacks ever. They’re easy to throw together and insanely healthy. I upped the nutrient density by adding salmon roe. In traditional cultures, fish eggs were reserved for men and women planning to conceive, pregnant women and growing children. It’s definitely a fertility food. Egg yolks are rich in vitamins A, E, D and K as well as choline – a necessary nutrient for pregnancy. Both the egg yolk and fish eggs are rich in omega-3s and the fish eggs are high in vitamins A, D and C and a great source of B12 and folate. Fiber keeps you regular and improve overall gut health, but be careful about which forms of fiber you’re eating. Shrimp & Avocado Salsa

Today is Cinco de Mayo, and like any good Arrested Development fan, yesterday I celebrated Cinco de Cuatro. In doing so I made this Shrimp & Avocado Salsa.
