I always think those Greek salads made with orzo or quinoa look really good. The problem is that I don’t eat orzo or quinoa. I could make this with rice, as I do eat white rice. But now that Trader Joe’s sells organic riced cauliflower, I’m basically obsessed. I bought six bags last week. It’s just me and my husband. I don’t need six bags of riced cauliflower. But I was worried they’d sell out soon – which they did.
I’m completely in love with the riced cauliflower. It so easy and incredibly healthy. While I didn’t make this meal specifically as a low carb option, it is a great low carb salad. Plus the cauliflower is way healthier than quinoa, orzo or rice.
Greek Cauliflower Rice Salad
Greek Cauliflower Salad! A delicious alternative to the rice filled versions! I'm completely in love with the riced cauliflower. It so easy and incredibly healthy. While I didn't make this meal specifically as a low carb option, it is a great low carb salad. Plus the cauliflower is way healthier than quinoa, orzo or rice.
Ingredients
- 2 cups riced cauliflower saute until soft, then let it cool in the fridge
- 1/2 cucumber diced
- 1/2 red onion diced
- 1 large tomato diced
- 1 tbsp dill
- 1 large garlic clove minced
- 1/4 cup olive oil
- salt and pepper
- options: olives
Instructions
- Combine all ingredients and give it a good toss.
- Serve cold.
Notes
You can add olives, but I hate them.

This sounds delicious! What’s your beef with quinoa? Is it a grain that isn’t good for your gut? What do you think of chia seeds, flax seeds or hemp seeds?
