I love me a good taco. Who doesn’t? They’re the Mexican version of sandwich and they’re spicy and delicious. Also, it’s WAY easier to make a grain-free version of a taco and make it taste good than it is to make a grain-free version of a sandwich. Have you tried grain-free bread? Not so good. I’m not even a huge chocolate fan and I L-O-V-E-D this pudding. And I hate coffee, but it had almost a mocha taste that I thought was really good, most likely because I also added a bit of almond extract. Almond Blackberry Cake with Coconut Frosting (Nut & Dairy Free)

Even if you get a gluten-free cake, it’s still full of sketchy ingredients. So I decided to make my own. And it turned out AWESOME. I have to say that the clear star of this cake is the frosting. I remember the first time I ever had banana pudding. I was in the hospital and I thought it was the best thing I ever tasted. It was bright yellow. Probably from toxic food dye. But you don’t think about that when you’re 7. After making my easy 5-minute paleo pudding last week, I was stoked to make more. 5 Minute Paleo Pudding

This is easily the quickest and simplest dessert I’ve ever made. On top of that, it’s full of healthy fat from the coconut milk. I know people love decadent, chocolatey, fancy desserts, but the good news about this pudding is that it can be used as a base for any flavor you want, and can even be used for pie filling. It’s versatile like that. Want chocolate pudding? Add a half cup of raw cacao. Want raspberry pudding? Just puree the raspberries and add ’em right in. Want banana pudding? Mash up some banana is stir it in. You can also make these in bulk and put them in the freezer. Thaw when you want a sweet snack that won’t spike your blood sugar. Ya’ll know I’m a fan of easy, simple dinners. We got back from Roatan late Saturday night and I have never been happier to sleep in my own bed. It was amazing and I was exhausted. By Sunday I was feeling better from a week’s worth of cooking that wasn’t my own, but after going to check out a wedding venue and grocery shopping, I was not feeling my usual Sunday meal prep. I recently had a salad with artichokes and grape tomatoes, so I was dying to turn that into some sort of dinner. This dinner was only 5 ingredients and took about 2 minutes to assemble and throw in the oven. Broccoli & Tomato Quiche

I don’t know about you, but the last thing I want to do as soon as I wake up is cook breakfast (whether it’s for me or someone else). I always recommend and factor batch cooking into my meal plans. It just makes life so much easier. You cook once and have breakfast for the entire week. This quiche was beyond and easy and tasted amazing. It’s also an extremely healthy and balanced breakfast. It is full of vitamins, healthy fats and omega-3s from the eggs (make sure to buy pastured eggs) as well as veggies and grass-fed cheese. This quiche take about 6 minutes to assemble, 40 minutes in the oven and you’re done. You have breakfast for the week. You can make more or less depending on how many you’re feeding.

The Best Fudgy Paleo Brownies

I have a confession: I like vanilla more than chocolate. I know, I’m one of those rare unicorns, because my friends and boyfriend constantly remind me how superior chocolate is over vanilla. Simple food is the best food. There’s a Mexican restaurant in my neighborhood that’s really good. They are authentic, make most of their food from scratch, and are therefore a bit pricey. I always order their spicy Mexican shrimp, which burns my face off because it’s made with a habanero, but I don’t even care. I decided to recreate the recipe at home.
