Listen, I know everyone loves to love. But I’ll be honest. I don’t like kale. The only way I could stomach kale was in my juices, covered up with a lot of carrots and lemon. Scott doesn’t even like kale (and refers to it as lizard foreskin…appetizing, right?). But I should actually say I never liked kale until last night, when I added bacon and garlic and jalapenos to it. I actually bought a giant bag or organic mixed greens that consisted of kale, collard and turnip greens from Trader Joe’s. The bag was surprisingly cheap, and now I plan on getting it during every trip to Trader J’s. Spicy Mixed Greens with Bacon These bacon fried spicy mixed greens are an easy side dish packed with vitamins! The bacon lends a wonderful smoky flavor to the greens! 2 pieces pastured bacon (chopped)2 cups mixed greens (roughly chopped)1-2 garlic…
Spicy Cilantro Shrimp
I love Trader J’s. We don’t often go because there is only one in the entire city and I usually stick to my local organic market, but we went last Saturday and I was in heaven. If you are strapped for cash and generally want to save money while still eating organic, go to Trader Joe’s! We got a ton of stuff, including wine and food for guests for $100. If I had stuck to my grocery list, I would’ve spent even less than that. How does this have anything to do with shrimp? I was walking through the frozen section and spotted some really affordable and WILD shrimp. I never buy farmed, so I immediately threw it in my cart. That’s how this baby was born. Gluten-Free Stuffing
Stuffing is probably my favorite side on Thanksgiving. Here is my gluten-free recipe, no one I’ve served it to has had any idea it’s not full of wheaty-death. Ingredients: 1 lb gluten-free bread (I don’t eat a ton of gf bread, but not is the perfect time to bust it out! I like this one) cut into cubes 6 tbsp butter, plus more for the top of the stuffing 1 large onion, diced 3 stalks celery, diced 2 garlic cloves, minced 3 tbsp dried sage 2 tbsp Trader Joe’s 21 Seasoning Salute (optional, but I love it) 2-3 cups chicken or turkey stock, preferably homemade salt and pepper Directions: Sauté the onionsand celery in butter. When it’s completely soft and the onions are translucent, add the garlic and sage and remove from heat. Add the 21 Seasoning Salute, if using. In a large bowl, toss the veggies with the bread. Pour one…

Paleo Pumpkin Pie
You guys this paleo pumpkin pie is just good. I dono’t even like pumpkin and I like this recipe. Truth be told, I don’t love pumpkin pie. I know, the horror. Pumpkin Pie is an American classic, a Thanksgiving tradition, all of that. But I’d just much rather eat a vanilla cream pie, which is what I make for myself on Thanksgiving. Yes, I make pumpkin pie for all the pumpkin lovers and make a chocolate pie basically for myself. Just kidding. Sort of. But even I like this pumpkin pie. I like the creaminess from the coconut milk, I like that it doesn’t taste like a bucket of sugar was added and overall I like knowing that I’m not going to develop diabetes from eating it. Especially if I have more than one slice of Paleo Pumpkin Pie. Which, let’s be honest, I will. Why this Paleo Pumpkin Pie…
Raw Tuna Salad
I love tuna (especially if it’s rare or raw). If it’s on a menu, you can pretty much bet your boots I’m ordering it. So if I’m at a sushi restaurant, I literally order tuna 100% of the time. And as much as I love sushi, it’s not exactly a health food. Don’t get me wrong, fish is amazing for you and white rice is an easily digestible grain that provides glucose. But unless you’re at a great place, it’s likely farmed fish that’s covered in wheat-ified soy sauce and the sauces are usually made of vegetable oils. Not good. When tuna went on sale at my local Whole Foods, I jumped on the chance to recreate my favorite raw tuna salad. It was surprisingly good, even better than the restaurant I get it from. It was so simple to make and is definitely my new favorite…
Greek Rice
Apparently, it’s Greek week here at AN. Yesterday I wrote about my neverending love of Greek food. This is actually the side dish I served with the lamb stew. It. Was. Awesome. If you digest rice well and are looking for an easily absorbable form of glucose, and want to make things that taste really, really good, you need to make this rice. I love that it’s not only loaded with veggies, but also healthy fats from the bone broth and butter (which slows the absoption of glucose). It’s the perfect side dish. Greek Lamb Stew
Whenever Scott and I are trying to figure out a healthy dinner date, I always suggest Greek food. Not only is the food amazing, but it’s so easy to eat a nutritious meal at Greek restaurants. Beyond lamb stew, they are just the bomb. Taramosalata dip (aka fish egg dip) with cucumbers? Amazing. Mushrooms stuffed with spinach and feta? I die. A simple Greek salad with gyro meat on top? The freaking best salad, anywhere, ever. So I try to cook a lot of Greek food. This week I had a pound of lamb shanks from the farm and decided to throw a stew into the crockpot before I left for work. It turned out so well, and my entire apartment smelled like a delicious Greek joint. Greek Lamb Stew This easy slow-cooked Greek Lamb Stew made in the crockpot is perfect for cold days! Serve them with cauliflower rice for…
Paleo Orange Chicken
I used to really love PF Chang’s. I mean, have you had the lettuce wraps? And the orange chicken? It’s all awesome. My favorite entree was orange peel shrimp. I’d get it every single time I went. But then I learned about health, and ingredients, and rancid vegetable oils, and sugar, and wheat and all that junk that goes into restaurant food. And I haven’t been back since. I recently figured out I could make my own version of the sauce that tasted pretty damn close to the original, no wheat, sugar, or vegetable oils involved. You can make this with shrimp or chicken, I made it with chicken because that’s what I had on hand. Pf Chang's Copycat Paleo Orange Chicken Lovers of Pf Changs Orange Chicken will love my paleo version! It uses no refined sugar – just oranges and butter as well as a dash or sriracha for spiciness! …
Paleo Pork Kabobs
I love me some easy dinners. Every weekend I take a few hours to prep some food for the week. It makes life so much easier. Last weekend I chopped up some veggies and pork and marinated them. When I got home on Tuesday, I barely felt like moving, much less cooking. Thankfully, I skewered the veggies and pork, sliced some potatoes and threw them in the oven. One pan. Ready in under 45 minutes. Paleo Pork Kabobs Last weekend I chopped up some veggies and pork and marinated them. When I got home on Tuesday, I barely felt like moving, much less cooking.
