Lamb is easily one of my favorite meats. Lamb shank is one of my favorite ways to enjoy it. It’s not only incredibly healthy. Lamb shank is also reasonably priced and tastes awesome. I love lamb, and every time I say that I think of this guy: Lamb isn’t just a great source of protein but is also high in omega-3s, B12, CLA, selenium, B3, and zinc. Recently I was not in the mood to cook. Which is rare for me because I love cooking and find it relaxing. For whatever reason, I didn’t wanna do it, but also didn’t want to spend money on takeout, not to mention the fact that you rarely have any idea what’s actually in takeout. Vegetable oils? Cod, along with rockfish (the state fish of Maryland) are my favorite white fishes. They are mild, tender and not overly fishy. Although I do love fishy-fish, most people don’t. Truth be told, most of the time I don’t love coming up with new and exciting recipe ideas (actually, I’m not sure I even do that in the first place). Grain-Free Enchiladas

Scott and I love Mexican food. LOVE. I mean, hello, we’re American after all. Unfortunately we don’t go out to eat it very often because Mexican food is loaded with GMOs (read: corn). Corn is one of the highest genetically modified crops in the country, so everything from tortilla chips to tacos to enchiladas is likely GMO. And don’t even get me started on the vegetable oil most restaurants use. This is why I was so happy to recreate this Mexican classic. I’ve tried different recipes for the tortillas and this is my favorite. Like a normal flour tortilla, it doesn’t have much flavor but it has a the same texture and absorbs the enchilada sauce. Healthy Chicken Tacos

I love me a good taco. Who doesn’t? They’re the Mexican version of sandwich and they’re spicy and delicious. Also, it’s WAY easier to make a grain-free version of a taco and make it taste good than it is to make a grain-free version of a sandwich. Have you tried grain-free bread? Not so good. Ya’ll know I’m a fan of easy, simple dinners. We got back from Roatan late Saturday night and I have never been happier to sleep in my own bed. It was amazing and I was exhausted. By Sunday I was feeling better from a week’s worth of cooking that wasn’t my own, but after going to check out a wedding venue and grocery shopping, I was not feeling my usual Sunday meal prep. I recently had a salad with artichokes and grape tomatoes, so I was dying to turn that into some sort of dinner. This dinner was only 5 ingredients and took about 2 minutes to assemble and throw in the oven. Spicy Mexican Shrimp

Simple food is the best food. There’s a Mexican restaurant in my neighborhood that’s really good. They are authentic, make most of their food from scratch, and are therefore a bit pricey. I always order their spicy Mexican shrimp, which burns my face off because it’s made with a habanero, but I don’t even care. I decided to recreate the recipe at home.
