Spicy Cilantro Shrimp

I love Trader J’s. We don’t often go because there is only one in the entire city and I usually stick to my local organic market, but we went last Saturday and I was in heaven. If you are strapped for cash and generally want to save money while still eating organic, go to Trader Joe’s! We got a ton of stuff, including wine and food for guests for $100. If I had stuck to my grocery list, I would’ve spent even less than that. How does this have anything to do with shrimp? I was walking through the frozen section and spotted some really affordable and WILD shrimp. I never buy farmed, so I immediately threw it in my cart. That’s how this baby was born. Poached Eggs Over Spicy Mexican Hash

Sometimes my best dishes are born from no recipe, no plan, and going into the kitchen just knowing it’s 11am and I haven’t eaten yet and I’m freaking starving. Everything in my fridge looked amazing (went grocery shopping yesterday) including the cranberry sauce that’s still in there from Thanksgiving. “Should I just eat the cranberry sauce by the spoonful?” I wondered. But then I had some leftover hash browns. And I had bacon. And I really like spicy foods. And I had a jalapeño. This sucker was being born. Mexican food is my favorite, so I decided to use those flavors. Coupled with the yolk porn you see above and below, it was pretty awesome. Poached Eggs over Mexican Hash Perfect soft poached eggs on a slightly spicy potato hash! Add a Mexican touch by throwing in some Jalapenos, onions and tomatoes. 1/2 cup potatoes (sliced or diced (I used…

Greek Lamb Stew

Whenever Scott and I are trying to figure out a healthy dinner date, I always suggest Greek food. Not only is the food amazing, but it’s so easy to eat a nutritious meal at Greek restaurants. Beyond lamb stew, they are just the bomb. Taramosalata dip (aka fish egg dip) with cucumbers? Amazing. Mushrooms stuffed with spinach and feta? I die. A simple Greek salad with gyro meat on top? The freaking best salad, anywhere, ever. So I try to cook a lot of Greek food. This week I had a pound of lamb shanks from the farm and decided to throw a stew into the crockpot before I left for work. It turned out so well, and my entire apartment smelled like a delicious Greek joint. Greek Lamb Stew This easy slow-cooked Greek Lamb Stew made in the crockpot is perfect for cold days! Paleo Pork Kabobs

I love me some easy dinners. Every weekend I take a few hours to prep some food for the week. It makes life so much easier. Last weekend I chopped up some veggies and pork and marinated them. When I got home on Tuesday, I barely felt like moving, much less cooking. Thankfully, I skewered the veggies and pork, sliced some potatoes and threw them in the oven. One pan. Ready in under 45 minutes. Paleo Pork Kabobs Last weekend I chopped up some veggies and pork and marinated them. When I got home on Tuesday, I barely felt like moving, much less cooking. Roasted Salmon & Asparagus with Easy Cayenne Hollandaise

When I was younger my favorite breakfast was egg benedict (wait, it still is). Of course, I could only get it at restaurants, which means I probably had it all of two times as a kid, but I remember always being intimidated by hollandaise sauce. It was so fancy, and so French. How could anyone possibly recreate that creamy, delicious sauce? My grandmother couldn’t, none of my friends’ moms ever made hollandaise. I was pretty sure you had to be a classically trained (probably French) chef to do it. Turns out, it’s actually really easy. Especially if you have a food processor. The great part about this meal is that while I was making the hollandaise, I had salmon and asparagus roasting in the oven. I simply turned the oven to 400, and immediately added a piece of salmon and one bunch of asparagus. Let it cook for 15 minutes. You have a…

Prosciutto Wrapped Chicken & Veggie Bake

I am a huge fan of simple, easy dinners that taste good and don’t involve using sub par ingredients to cut corners. You really don’t need to be an experienced cook or buy expensive, fancy ingredients to make healthy, delicious meals. Prosciutto was on sale at my local organic market so I picked some up over the weekend. Last night I decided that I really wanted to take a bath around 6 o’clock. We usually eat dinner around 7, so I had to come up with something that I could just set and forget. I chopped some veggies, tossed them in herbs and olive oil, wrapped two chicken thighs in prosciutto and popped it all in the oven. It took me about 5 minutes. How easy is that?! 20 Minute Meal: Spicy Mexican Veggie Egg Bake (Paleo & Primal)

I’ve mentioned before that Scott is a vegetarian. When we first started dating he was a vegan. It was seriously challenging to feed that man. Since then I like to think that I’ve upped my vegetarian cooking game. I am constantly trying to come up with vegetarian recipes that are unprocessed, free of grains and legumes and yet still full of healthy fats and proteins. It ain’t easy but I get it done.   20 Minute Meal: Spicy Mexican Veggie Egg Bake (Paleo & Primal) I am constantly trying to come up with vegetarian recipes that are unprocessed, free of grains and legumes and yet still full of healthy fats and proteins. Perfect Health Diet Spaghetti With Summer Tomatoes

Spaghetti is Scott’s favorite food and let’s be honest, zucchini noodles just don’t cut it. It’s not the same. I gave up spaghetti for a long time because I don’t eat wheat, until I found white rice noodles (which turned out to be an awesome gluten-free and safe starch alternative). I’ll be honest, I was skeptical at first. I thought it would be a lot like eating pad Thai or pho noodles with spaghetti sauce on top. Gross. But it turns out, they’re awesome. The white rice spaghetti noods have the same texture as regular ol’ pasta, and they don’t have a strange taste. Pasta on its own isn’t flavorful, so the noodles just taste like whatever sauce you add to them. And for the sauce I used fresh summer tomatoes and basil that we got from the farmers market. It was amazing. I love fresh, homemade sauces. It was so summery.…

Asian Eggplant and Chicken (Paleo, Primal)

I love me some Asian eggplant. Whenever Scott and I go to the Thai place by our house we split the sauteed eggplant. I have no idea what it’s sauteed in (probably sugar, vegetable oil, HFCS and garlic) but it tastes awesome. That’s the thing about going out to eat: you never know what they’re putting in the food. Since I cooked the majority of our meals, I don’t stress about it when we go out to restaurants, but I also figured I could probably make it myself. Which is great, because this is my new favorite way to eat eggplant. It was so, so good!
