I surprised even myself with how insanely delicious this turned out. I really, truly believe it’s the best gluten-free vanilla cake ever made. It’s THAT good. Okay so I’ve said it once, I’ve said it a thousand times – I am not a baker. I don’t like to bake. I don’t like to follow a recipe. These are absolutely the BEST gluten-free cinnamon rolls! I’ve been making cinnamon rolls every Christmas morning for ten years and this is by far the best recipe I’ve tried! This pumpkin pecan cobbler is paleo, gluten-free, totally delicious and perfect for fall! I have a confession to make: I kind of hate pumpkin. I don’t like pumpkin pie. I don’t drink pumpkin spice lattes. And I don’t add pumpkin to my daily smoothie once August 15th rolls around and the cans show up in Whole Foods.
