Sea Bass with Herbs, Tomatoes & Capers

This gluten-free sea bass with herbs, tomatoes & capers is easy to make, incredibly healthy and fancy enough to fool anyone into thinking you’re a brilliant chef. Plus it takes all of 15 minutes from start to finish. I am a lucky person. We moved from DC to Charleston, South Carolina in June of 2020. No one thought we’d do it. My mother in law thought we were insane. But now, it’s 70 degrees on March 1st and I golf carted to the docks in my neighborhood to pick up fresh sea bass. Life is good. Fresh seafood is probably my most favorite category of food. Give me some oysters, a whole grilled fish, a crisp glass of white wine and I am GOOD. Not to mention that seafood is one of the absolute healthiest foods available to us as humans. Pair it with herbs, tomatoes and capers and you’ve…

Gluten-Free Shrimp, Artichoke, Spinach & Tomato Pasta

This 20 minute gluten-free shrimp, artichoke, spinach & tomato pasta came about when I felt too lazy to make lunch. I’m pregnant, I work from home and I really just felt like walking up to Chipotle. This is the danger of living within walking distance of a Chipotle. Wanting it ALL the time. Eating ALL the Chipotle. But I persevered. I got my ass up and opened my fridge and stared in for a solid seven minutes. My toddler was running around in his winter boots (it’s August, by the way) and our amazing sitter was chasing him. I tend to look at random ingredients until some sort of plan forms in my brain. I had frozen shrimp and artichokes, spinach that was just beginning to wilt, I always keep brown rice and quinoa pasta in my pantry, Ya’ll know I always have butter. I can’t live without it. If…

Green Beans Side Dish with Garlic and Tomatoes

An easy green beans side dish with garlic and tomatoes – healthy, low carb, paleo and seriously delicious. The secret? Garlic ghee!  Green Beans – my favorite healthy side dish! Growing up, my grandmother always made this simple delicious green beans side dish. Granted, they were from a can, but they were SO good. She added butter and sautéed onions and they were a cheap, delicious side dish. A common meal would have been ground beef and spices or roasted chicken with mashed potatoes and a side of green beans. For not having any idea about health or nutrition, this was a pretty healthy meal. We’ve complicated healthy eating so much over the years. Vegan, paleo, low-carb, vegetarian, pescetarian, etc. But our grandmothers knew something we didn’t: real, whole food is best. They didn’t worry about labeling the way they ate. They just ate. My grandmother grew up with a…

Creamy Artichoke, Leek and Tomato Side Dish

For one of Scott’s Christmas gifts, I got us a weekend away in Easton, MD for New Years Eve weekend. It’s a cute little Chesapeake Bay town with lots of seafood, antiques and quaint everything. Our hotel was gorgeous. (I promise, Side Dish goodness is a part of this!) And they had an awesome restaurant with a heated outdoor patio. Which was great because I got to drink champagne outside in December without freezing to death. We walked around, hung out and checked out some great restaurants. One of which was Mason’s, a local farm to table restaurant with an emphasis on local seafood as well. I got a white fish (forget which kind exactly) on top of the creamy artichoke, leek, and tomato side dish that was amazing. I’ve been fantasizing about it inappropriately for almost a month now like a weirdo. So I recreated it for you guys.…

Arugula, Tomato & Burrata on Paleo Pizza Crust

I kid you not, this is the most legit paleo and grain-free pizza crust I’ve ever tried (not just the most legit pizza crust I’ve ever made – the most legit paleo crust I’ve ever tried). You can hold it like an actual pizza without it being a floppy mess, it stands up to a ton of toppings and it’s a bit chewy. And you can use this paleo pizza crust for any kind of pizza after this! I topped it with garlic and olive oil, then added arugula, roasted tomatoes and burrata. But my favorite way to eat it is with pizza sauce, fresh mozzarella and a ton of mushrooms (my favorite topping ever). Load it up with your favorites for a healthy pizza night! The recipe is actually pretty simple and it’s easy to make. Here’s what the dough looked like: Here’s what it looked like spread out…

Paleo Tomato & Herb Quiche

I kind of hate making breakfast. For the most part, I’m not hungry when I wake up (around 7 or 8) and work until I actually feel the need to eat (around 10 or 11). By that time, I don’t want to actually make breakfast, I kind of just want it to appear in front of me. Which is why I like making quiches or egg casseroles. Making a quiche at the beginning of the week allows me to just pop a piece in the oven on the toast setting for three minutes and be good to go. It makes my life easier and I like that. Plus, Paleo Tomato and Herb Quiche This paleo tomato and herb quiche is loaded with nutrients from the herbs, greens, eggs and tomatoes. 1 batch of paleo pie crust (see notes)1/2 cup milk of choice6 eggs2 tomatoes (sliced)1/2 cup basil1/4 cup dill1/4 cup…

Paleo Bacon, Arugula and Tomato Risotto

BLT risotto! Sometimes I’m pretty sure I’m a culinary genius. Now is one of those times. This was so, so good and I made a ton of it to eat throughout the week. It works really well as a side dish or you can grill up some chicken or steak, slice it and serve overtop of this. I love me some risotto and the cauliflower works really well in place of rice. Paleo Leek, Mushroom and Grape Tomato Risotto

Risotto is such a rich, decadent food. I mean, super creamy rice – what’s not to love? Well, I don’t love eating a giant bowl of rice. Don’t get me wrong, I eat white rice from time to time, especially if I’ve worked out that day. But a healthier option is definitely subbing cauliflower for the rice. And it actually tastes pretty amazing. Paleo Leek, Mushroom and Grape Tomato Risotto Paleo Leek, Mushroom and Tomato Cauliflower Risotto This is the perfect easy low-carb alternative to regular risotto! Loaded with healthy mushrooms, leeks and tomatoes and made extra creamy through the addition of coconut cream. 4 cups cauliflower (riced (using food processor or grater))4 large mushrooms (sliced)1 leek (sliced)3/4 cup grape tomatoes (halved)2 tbsp butter1/2 cup raw & grass-fed cream or coconut cream (the thick part at the top)salt and pepper Melt the butter over medium to medium-high heat. Arugula, Tomato & Onion Sautéed Cod

Cod, along with rockfish (the state fish of Maryland) are my favorite white fishes. They are mild, tender and not overly fishy. Although I do love fishy-fish, most people don’t. My husband is one of those people. He hates fish that taste too fish, so cod has been an awesome option for him. The other great thing about cod is that it’s so versatile. Because it’s so mild, its flavors blend well with basically whatever the hell you want to make. And I had a bunch of arugula, tomato and onion from the farmers market, so this worked out perfectly. Also, I’ve been on a huge arugula kick lately. I used to HATE arugula. I thought it was really bitter and gross. Now I just love it. I read about the benefits of arugula, and it tuns out that it supposedly boost libido. I have to admit – I think…
