Well, I am officially tired of eating the same food repetitively. And I really want some organic wine. Last night’s dinner was pretty good though. I made a variation of my meatloaf recipe. I combined ground beef, tomatoes, onion and basil in ramekins and made mini meatloafs. I served it with broccoli which I am now out of. I had the meatloaf for lunch today along with some sauteed potato. Thank goodness I bought giant bags of onions and potatoes. Otherwise I’d be very low on food. I’m also fortunate that the tomatoes I bought were really large, I’ve been able to ration them pretty well and I think I’ll have enough to last me until Sunday. I’ve only been using a small amount. The Paleo Snap Challenge Day 3

I know I’m only in my third day, but cooking a limited amount of food in terms of ingredients has not beed terribly difficult. I’m sure by the end of the week I’ll be tired of beef, eggs, onions, broccoli, tomatoes and potatoes, but right now I’m good. The limited ingredients has forced me to become more creative with my meals and I was even able to come up with a new recipe. This is actually turning into something I really enjoy. I love being forced to come up with new meals from the same ingredients. Last night I decided to whip out the stovetop grill. The Paleo SNAP Challenge Day 2

I’m well into day two and it’s going well so far. While I haven’t eaten the most exciting meals for the past two days, by no means have they been bad meals. They taste good, they’re nourishing, they provide vitamins and minerals, they work. Last night for dinner I sauteed about a half pound of the ground beef with a little bit of butter. I did add some spices that were around my apartment. I did not factor these into the costs of the week because my spice cabinet was already fully stocked and I probably used about $0.07 worth of spices, if that. I grated a small amount of cheese over the beef and served it with a side of broccoli (also sauteed in a small amount of butter). I topped the beef with homemade pico de gallo. I am a huge fan of simple, easy dinners that taste good and don’t involve using sub par ingredients to cut corners. You really don’t need to be an experienced cook or buy expensive, fancy ingredients to make healthy, delicious meals. Prosciutto was on sale at my local organic market so I picked some up over the weekend. Last night I decided that I really wanted to take a bath around 6 o’clock. We usually eat dinner around 7, so I had to come up with something that I could just set and forget. Easy Potato Pancakes (Paleo & Primal)

Recently Scott and I had our friends Nick and Tasha over for dinner. I made a stupid amount of mashed potatoes because mashed potatoes are delicious and I knew they’d get eaten as a side dish for dinners later in the week (which makes my life a lot easier). I highly recommend making a lot of food at once and storing a portion of it in your refrigerator until you need it. But don’t make too much, like I did. On Friday night Scott and I had our friends Nick and Tasha over for dinner. I made brushetta with grain-free bread, asparagus, stuffed mushrooms, mashed potatoes and salmon. I made sure to make extra salmon and mashed potatoes because I knew we would eat it throughout the next week (aka this week). On Saturday we went tubing with friends and had a cookout afterward. For the cookout I made potato salad and pasta salad (using rice pasta). I did the same thing, I made a ton of it so we’d have leftovers to eat throughout the week. Salad ingredients. Scott and I spent the weekend in Rehoboth Beach. We had an awesome time and headed back pretty early on Sunday. Throughout the week we eat a lot of salads, eggs, rice and/or potatoes as a safe starch, and other various proteins. We made a quick stop at the grocery store and here is what I prepped for the week. Last week I made a new recipe I came up with, Asian eggplant and chicken. It was so good. I’ve been craving it ever since I made it. I got one really large eggplant at the store and cut it into cubes to make the recipe this week. It doesn’t look like a lot, but the tupperware it’s in is really deep. 20 Minute Meal: Tomato Basil Chicken

Sometimes, I love spending a long time in the kitchen cooking. Scott will have a game on in the living room, I’ll be cooking an awesome dinner and drinking wine, and it’s really fun for me. But during the week, more often than not I am hungry and want some easy, tasty food in my stomach as soon as possible.   In this case, I have an arsenal of 20 minute meals; meals that are super easy to make and still taste great. And honestly, due to meal prepping, this dinner took me less than twenty minutes, more like 15. How To Meal Plan

I’m going to be honest. It pisses me off when people tell me they do not have the time to eat well, that they don’t have the time to cook. This tells me three things, that they assume people who do cook have more time than them, they are busier than people who prioritize healthy eating, and that they do not prioritize healthy eating. We all have the same twenty four hours in day. Some of us work two jobs, some of us have kids, some of us are taking care of a sick family member. That’s called LIFE. And you’re going to make the time to take care of yourself, or you’re not. But here’s how to do it. Why Do People Hate Paleo?

There have been a ton of articles popping up that apparently “debunk paleo” or somehow prove it isn’t scientifically accurate. I won’t even link to them because I’m not going to drive traffic to these agenda fueled articles that are poorly researched and even more poorly written. That being said, I am occasionally hesitant to call myself paleo for a few reasons. The first is that I really don’t like labeling the way I eat and pigeonholing it, and more accurately I follow a Perfect Health Diet. But paleo is more about what you don’t eat than what you do. We don’t eat vegetable oils, toxic grains, gluten, processed food, genetically modified food, etc. As long as you are eating whole foods that are easy on your digestion and are good for you, what the hell is the problem?
