This Ground Beef Stroganoff is a super quick and easy weeknight dinner recipe, that your whole family will love.

I looove beef stroganoff. It’s one of those comforting meals that is quick and easy to make, plus it can feed your whole family with a short list of ingredients!

But I don’t love it with beef cubes or steak. It takes longer to cook and it’s much chewier than ground beef.

If you’re wondering why that matters, it’s because my teeth have been hurting. A filling has started to move somehow and my dentist tried to charge me $750 to fix it. So I left.

And came home and made ground beef stroganoff because it’s easy to chew. Super appetizing right?

Okay but seriously it’s easier and cheaper. Ground beef takes like, five and a half minutes to cook.

The mushrooms and onions don’t take long either. The entire beef stroganoff recipe took me about 20 minutes, thanks to the fact that I had leftover mashed potatoes to serve them on.

What to serve with this ground beef stroganoff?

The obvious choice would be mashed potatoes or even mashed yams. If you’re keto or super low carb, serve this on mashed cauliflower or mashed celeriac root. Maybe some green beans to add some color to your plate?

Want pasta with your low carb beef stroganoff? You can serve it as a sauce over zucchini noodles or sweet potato noodles.

Tips for making this paleo beef stroganoff recipe:

  • If you’re strict paleo, dairy-free or Whole30, make it with coconut cream or cashew cream instead of sour cream.
  • I used a lactose-free sour cream, which I find easier on digestion. But use what you like!
  • Arrowroot should be added at the end of cooking because it thickens quickly and can start to break back down and become watery if left over heat for an extended period of time

Ingredients

  • 1 lb grass-fed ground beef
  • 16 oz button mushroom
  • 1/2 large white onion, diced
  • 2 garlic cloves, chopped
  • 1 cup beef or chicken bone broth
  • 1 cup sour cream or coconut cream for Whole30
  • 1 tbsp ghee
  • 1 tbsp arrowroot flour
  • a dash of dried oregano
  • optional: mashed potatoes or mashed cauliflower

Instructions

  • Melt the ghee over medium high heat.
  • Add the mushroom, cook until browned and set aside.
  • Add the ground beef and onions.
  • Sautè until the beef is cooked through. 
  • Drain the beef fat (I use a colander to do this, not because it’s unhealthy but because we want a different taste).
  • Return the mushrooms, onions and beef to the pan.
  • Add the garlic, broth and sour cream. 
  • Bring to a simmer and sprinkle the arrowroot over top. Then stir to thicken. 
  • Add a sprinkle of oregano. Not too much, it just lends a really nice flavor. 
  • Serve over mashed potatoes or mash cauliflower.
