In Defense of Kerrygold

Recently an article was written about Kerrygold. In case you don’t know, they are an Irish company that produces grass-fed dairy products, shaming them for not feeding their cows grass 365 days a year and feeding them supplemental feed that includes soy and corn. I’m sure the author of this article was very well-intentioned when writing it, so I don’t want my response to come off as an attack; it’s not. I just want to clarify a few things and throw in my two cents. Kerrygold’s cows are not on pasture 365 days a year. They are on pasture roughly 312 days out of the year. This means about 10% of their diet is supplemented. Of this 10%, the majority is made up of GM-free wheat and barley. This is completely normal for cows. Meal Plan Monday

Scott and I spent the weekend in Rehoboth Beach. We had an awesome time and headed back pretty early on Sunday. Throughout the week we eat a lot of salads, eggs, rice and/or potatoes as a safe starch, and other various proteins. We made a quick stop at the grocery store and here is what I prepped for the week. Last week I made a new recipe I came up with, Asian eggplant and chicken. It was so good. I’ve been craving it ever since I made it. Is there a better combination than jalapenos, bacon, and cheese? If so, I haven’t found it. Jalapenos have quickly become one of my favorite foods. Scrambled eggs have always been a favorite. Perfect Health Diet Spaghetti With Summer Tomatoes

Spaghetti is Scott’s favorite food and let’s be honest, zucchini noodles just don’t cut it. It’s not the same. I gave up spaghetti for a long time because I don’t eat wheat, until I found white rice noodles (which turned out to be an awesome gluten-free and safe starch alternative). I’ll be honest, I was skeptical at first. I thought it would be a lot like eating pad Thai or pho noodles with spaghetti sauce on top. Gross. But it turns out, they’re awesome. The white rice spaghetti noods have the same texture as regular ol’ pasta, and they don’t have a strange taste. Pasta on its own isn’t flavorful, so the noodles just taste like whatever sauce you add to them. And for the sauce I used fresh summer tomatoes and basil that we got from the farmers market. I love me some Asian eggplant. Whenever Scott and I go to the Thai place by our house we split the sauteed eggplant. I have no idea what it’s sauteed in (probably sugar, vegetable oil, HFCS and garlic) but it tastes awesome. That’s the thing about going out to eat: you never know what they’re putting in the food. Superfood Smoothie With Blackberries

I’ll be honest: I’m not a huge smoothie person. I don’t prefer to drink my meals and I don’t consider a smoothie a great meal replacement. Meals are meals, smoothies are smoothies. I actually consider them dessert. They are sweet, fruity and delicious, like dessert. Last night Scott and I had dinner and we were still a little hungry and both wanted something sweet so I decided to make a superfood smoothie. What’s makes it a superfood? It ain’t the blackberries, and I didn’t use some obscure nut or seed. What ups the nutrient density in this smoothie is two things: egg yolks and gelatin! Egg yolks contain omega-3 fatty acids, vitamins A, E, D, B, K and E, choline, B12 and all nine essential amino acids. Gelatin improves hair, skin, and nails. Our Trip To Chincoteague

Over July 4th weekend Scott and I went to Chincoteague, VA. Chincoteague is a tiny island adjacent to Assateague Island which has an awesome beach with wild ponies! It’s such a great place. It’s beautiful and not over developed like most beach towns. Many of the people that live there (which ain’t a lot) are fishermen. They crab, catch oysters and wrangle up local fishies. I was in seafood heaven. When we got there we immediately hit the beach. Even though it was 5pm. I love the beach! We then went to dinner. I crushed some oysters. We walked around the quaint beach town. I thought this was the sweetest mural ever. Miss Ruby Lee! I ate crabs. They were DelMarValous. Which is my new favorite word. 20 Minute Meal: Tomato Basil Chicken

Sometimes, I love spending a long time in the kitchen cooking. Scott will have a game on in the living room, I’ll be cooking an awesome dinner and drinking wine, and it’s really fun for me. But during the week, more often than not I am hungry and want some easy, tasty food in my stomach as soon as possible.   In this case, I have an arsenal of 20 minute meals; meals that are super easy to make and still taste great. And honestly, due to meal prepping, this dinner took me less than twenty minutes, more like 15. Meal Plan Mondays

I’ll be honest, I didn’t make a ton of food yesterday because I was feeling super lazy. Scott and I went on a really long walk earlier in the day (in the hot sun and humidity) and I had been on the go all weekend. The last thing I wanted to do was spend hours cooking and chopping food, but I knew this week would be busy so I didn’t want to be completely unprepared either. Grilled Eggplant And Tomato Caprese This easy Grilled Eggplant and Tomato Caprese is healthy low-carb appetizer or side dish perfect for the upcoming bbq season.
