Five Ingredient Eggplant Dip

I love dips. There’s something about setting out dips, homemade bread, olives, raw cheese and cured meats that makes me feel very European, and I’m into that. Even though I’ve only been to Europe once. Also, I’d just like to say that I’m so excited for the farmers market to come back next month. My favorite farmer has amazing, gigantic, organic eggplants. Only one more month until that awesome market is back in my life! And eggplants are super healthy. Eggplants contain: vitamin C beta carotene phosphorous potassium magnesium niacin copper thiamin vitamin B6 This dip is super easy to make and goes over well at parties. How To Pack A Paleo Lunch

When I didn’t work from home, my coworkers would constantly ask how I managed to pack a healthy lunch every single day. It really doesn’t need to be complicated: a protein, a starch (read about why white rice is healthier than brown and is a paleo approved starch HERE), a veggie, a snack. Packing a healthy, paleo lunch is the easiest thing ever. AND IT SAVES A TON OF MONEY. Generally speaking, buying lunch everyday costs around $10, but packing your own 100% organic lunch is less than $5! The big problem with buying lunch is that you never really know the ingredients. When I didn’t work from home, occasionally I bought food from my favorite local lunch spot or from the cafeteria at work. I know the meat and vegetables were not organic, but even more than that, they likely used cheap, rancid vegetable oils, MSG, soy and wheat.…

Does KFC Really Use Genetically Engineered Chicken?

Recently I read an article about KFC no longer being able to call themselves “Kentucky Fried Chicken” because they don’t actually use chicken in their products, but instead use genetically engineered chickens that looks like this: According to several websites, KFC’s chickens have no beaks or feet, they have multiple legs and wings growing on them, and they are kept alive by tubes inserted into their bodies to perform basic functions. These websites cite a study done at the University of New Hampshire. Naturally, and prompted by the nightmare inducing photo above, I set out to find this study from UNH. Truth is, it doesn’t exist. According the UNH, An active Internet hoax, of the urban legend type, falsely claims that KFC (Kentucky Fried Chicken) is using genetically engineered organisms instead of chickens. The hoax includes reference to an unspecified study of KFC done at the University of New Hampshire and there…

Kimchi Fried Rice & Eggs

Kimchi rice has quickly become my favorite post-workout meal. It’s full of healthy fats, probiotics, protein, veggies, and glucose. Kimchi is fermented cabbage and spices and it’s the national dish of Korea. Some Korean homes even have a separate fridge just to store kimchi. I learned that on House Hunters International. It’s quick and easy to prepare for a post-workout recovery, too. At the beginning of each week I make a batch of white rice (you can read about why I eat white rice here) so this really only takes a few minutes to throw together.   Kimchi Fried Rice KIMCHI RICE HAS QUICKLY BECOME MY FAVORITE POST-WORKOUT MEAL.It’s full of healthy fats, probiotics, protein, veggies, and glucose. Why White Rice Is Healthier Than Brown Rice

Brown Rice vs White Rice – which rice is best for you? While brown rice is often recognized as the healthier option, this article presents the benefits of eating white rice! Truth be told, I really dislike labels, especially when it comes to diet. I don’t like being pigeonholed into one specific category, and having to follow the guidelines of what is expected and outlined within that categorization. I’m a free spirit, I follow no rules! Which is why it’s kind of frustrating to constantly be asked about my white rice consumption. I feel we need to talk brown rice vs white rice! Brown Rice vs White Rice – Which rice is best for you? Let’s start with some frequently asked questions that I get to hear a lot. Like a lot lot. Isn’t white rice bad? Won’t it spike your blood sugar? Isn’t brown rice healthier than white rice?…

Vanilla Salted Caramel Cups

Why Your Ancestors Didn’t Have Anxiety Or Depression And You Do

A look back at our ancestor’s lifestyle and diets will help you understand why you are suffering from anxiety and depression – and why they didn’t. Like everyone, our ancestors experienced anxiety and likely bouts of depression. The issue is that generalized anxiety disorder as well as well as depression has and continues to rise at an alarming rate. Generally speaking, our ancestors did experience anxiety and depression, but not to the disordered extent that many people do today. What was once necessary and built-in mechanisms to protect us from danger have become a constant for some people. Anxiety disorder wasn’t even diagnosed until 1980, not so long ago in the scope of medical diagnoses. While the root cause of anxiety and depression (which are often both present) is different for everyone, there are several dietary factors that contribute to these mental disorders. Food: Fat, Inflammation, Toxins, Soil Depletion Our…

Jalapeño Cilantro Deviled Eggs

I’m obsessed with deviled eggs. They are freaking delicious and make the best snacks! Plus, eggs are rich in vitamins A, E, D and K, choline and the beneficial omega-3 fatty acids, EPA and DHA. They’re basically multivitamins, ones that you can actually absorb and easily digest. These are also perfect for parties. You don’t have to add the jalapeño ring on top, but I am in love with spicy food so I of course do. The creaminess of the yolk and mayo pair perfectly with the cilantro and jalapeño. It’s unbelievably good.   Jalapeno Cilantro Deviled Eggs I’m obsessed with deviled eggs.
