Organic Ranch Mushrooms

When I was a kid, my parents would order pizza with mushrooms. Always. They didn’t care that I hated mushrooms, I had to pick them off. I guess I don’t blame them. Mushrooms are delicious. It’s one of those foods that I absolutely loathed as a kid. I thought they tasted awful and were slimy. Now I can’t get enough and I get mad if they skimp on the ‘shrooms when I order a (gluten-free) pizza. I also love ranch dressing (seriously, who doesn’t). Except, most ranch dressing ingredients look like this: Yeah, not something I’m willing to eat. So I had to come up with an alternative to ranch mushrooms, because most recipes call for adding ranch dressing to mushrooms and that wasn’t happening. So here is my recipe for organic ranch mushrooms. Organic Ranch Mushrooms These organic Ranch Mushrooms make for the best healthy side for steaks or grilled chicken! Easy to make…

Greek Goat Cheese Stuffed Mushrooms

Greek food is my favorite food. Dill and oregano are two of my favorite spices and they work really well in these stuffed ‘shrooms, but feel free to add or omit any spices. You can also use feta cheese instead of goat cheese, which was my plan until I realized I didn’t have any feta. I also added red pepper flakes, because I’m obsessed with all things spicy. Greek Goat Cheese Stuffed Mushrooms Prep time: 10 mins Cook time: 10 mins Total time: 20 mins Ingredients 6 mushrooms caps, stems removed and set aside 1 tbsp butter, ghee or coconut oil 5-6 cups spinach (it shrinks!) 2 tbsp sun dried tomatoes 1 garlic clove 3.5 oz goat cheese dash of oregano dash of dill Instructions Preheat oven to 375. Remove the stems from the mushrooms and give them a chop. Give the spinach a rough chop. Melt the butter, ghee…

Spaghetti Squash Carbonara with Mushrooms

Trying to maintain a mostly grain-free diet is occasionally difficult for Scott, because that man loves pasta. His favorite meal is spaghetti. He says he could eat it for the rest of his life, and I believe him. So in an attempt to not feed him empty carbs that will upset his or my own digestion, I use spaghetti squash. Sketti squash is cool because it contains manganese, potassium, magnesium and vitamin C, among other vitamins and minerals. Get it, squash! Anti-Inflammatory Salmon and Veggie Bowl

This anti-inflammatory salmon and veggie bowl is easy to meal prep, perfect for gut and overall health and is totally delicious. I love a good bowl. A Greek chicken bowl. An Asian ground chicken bowl. Egg roll in a bowl. Korean ground beef and veggie bowl. I love ’em all. And even better, they’re perfect for meal prepping. I only meal prepped two of these bowls but I wish I’d done more. They were SO good, filling and healthy. I love eating healthy food because it literally makes my body and brain feel better. There’s a reason for this. Did you know that the food you eat isn’t just energy for your cells, it’s information? How we eat determines more than our body composition, it determines how we think, mental clarity, cognitive function, our mood, our energy, our sleep, genetic expression and so much more. I’m so in love with…

Gluten-Free Spring Pea, Chicken & Mushroom Pasta

This easy gluten-free pea, chicken and mushroom pasta is the perfect springtime dinner! Bursting with healthy fresh spring produce and herbs, it’s creamy and delicious. I love spring! Summer has always been my favorite season and I kind of ignored the lowly spring. This year though, I’m living for it! Maybe it’s because I’m getting older, but I notice the longer days, the warmer weather and the signs of the earth coming to life all around me. Little purple flowers are popping up in my backyard. It’s light out after 6 pm. My sons are taking off their jackets and refusing to put them back on. Spring is in the air! Best of all – spring produce is popping up at the farmers market! My market is bursting with fresh herbs, mushrooms, peas, asparagus – you name it. So I came up with a delicious gluten-free chicken and mushroom pasta.…

Asian Chicken Wings (Gluten-Free, Keto)

These Asian chicken wings are only five ingredients plus they’re gluten-free, keto, paleo and super healthy! Ya’ll. I hate Buffalo sauce. Like it is just NOT good. It’s sour, there is no real depth of flavor, there’s no garlic or onion flavor. And to be honest I’d eat garlic in my pancakes I love it so much. I know everyone loves Buffalo sauce. But I’m not on the Buffalo sauce train. Especially after making these super easy Asian chicken wings, which are SO GOOD. See how beautiful they are? I served this up with some jasmine rice and a side of sautéed bok choy and shiitake mushrooms. Tons of veggies and the whole meal was packed with delicious Asian flavor. I love trying to come up with Asian dishes. They’re just so damn healthy if you use the right ingredients. Health Benefits: This recipe is gluten-free, soy-free, dairy-free, low-carb, paleo,…

An Unbiased Review of All In by Teddi Mellencamp

After seeing some emerging details about this program, I’m totally horrified that women are investing thousands in such a dangerous program. So here is an unbiased review of All In by Teddi Mellencamp. Listen, I watch Housewives. Beverly Hills is not and has never been at the top of my list. Let’s be honest, they just can’t keep up with New York. Last night I got sucked into Emily Gellis Lande’s Instagram about All In by Teddi Mellencamp. I wasn’t familiar with the program and I was shocked to see so many women sharing horror stories. My shock turned to anger when I saw that Teddi is now promoting her program for postpartum mothers. As a mother myself, that anyone would promote this starvation diet to a woman in her most vulnerable time is sickening. For the record, I have some several unbiased reviews on various programs, meal replacements and…

Easy Chicken and Veggie Green Curry (Paleo, Keto, Gluten-Free)

This easy chicken and veggie green curry is paleo, keto, gluten-free and crazy good. It’s perfect for meal prep and tastes better the next day! I’ve been craving warmer, spicier dishes lately. Maybe it’s because fall has already seemingly visited DC and it’s only August. It’s raining consistently and it’s often in the 60s. I’m not ready for it because I’m a summer lover through and through, but I do love a big bowl of warm, spicy, flavorful curry. I got some really beautiful Asian eggplant from the farmers market and paired it with eggplant I grew in my backyard. I LOVE eggplant. You can add any veggies you like. Bell peppers and shiitake mushrooms would be brilliant in this dish. I found half a bag of broccoli, cauliflower and carrot mix in my freezer, so I tossed that in. Then I topped with 1lb of chicken breasts from my…
