Mexican Chipotle Slaw

Scott and I are kind of addicted to Mexican food. He’s worse than I am though. At least a few times a month we’ll go to our favorite Mexican joint, El Centro (they also have organic red wine, what!). I always (literally, always) get the fish tacos. Normally fish tacos are mostly the breading and are deep fried in cheap, rancid vegetable oils (that will give you heart disease!). But El Centro’s fish tacos are grilled, then topped with a cabbage slaw, chipotle sauce, pico de gallo and avocado. It’s amazing. I ditch the corn tortilla and just eat it like a salad. While making my grocery lists and meal plans for the week, I realize I could totally recreate the slaw (or could I?). I recently had a discussion with a coworker about the nutrient density of oatmeal versus eggs. According to her, oatmeal was filling, healthy, low in fat and much healthier than eggs. My boyfriend is pretty much covered in tattoos. I think sometimes people preemptively judge him (and others) for this. Yesterday I was craving a sweet treat and came up with these. I love vanilla and caramel flavors so I stuck with those, but if you like chocolate, I definitely suggest sprinkling chocolate chips on top of this. The Paleo SNAP Challenge Conclusion

I finished the Paleo Snap Challenge and I have to be honest, it wasn’t that difficult. Growing up I was raised by my grandmother and occasionally by my mostly absent mother. My grandmother’s income consisted of social security, which left little money for food; therefore I ate a lot of white bread and margarine sandwiches. By 16 I was living on my own and had hardly any money at all, much less to spend on food. I know what it’s like to be poor. I became really good at creating different meals from the same ingredients, which is something people do in jail, which I learned from a very sketchy roommate I once had. The Paleo SNAP Challenge Day 6

The hardest part of this challenge hasn’t been hunger or malnutrition, it’s been eating the same foods that lack variety. I am not one of those people who likes to eat the same thing day after day. I crave variety. I am completely bored with my food choices. I would love to eat sushi, Mexican, Russian, Thai and every food that I can’t eat right now. Getting creative with these foods has been challenging, but in a good way. It’s forced me to come up with more recipes, put more effort into planning and to think critically about the food that is available to me, which is great. Well, I am officially tired of eating the same food repetitively. And I really want some organic wine. Last night’s dinner was pretty good though. I made a variation of my meatloaf recipe. I combined ground beef, tomatoes, onion and basil in ramekins and made mini meatloafs. I served it with broccoli which I am now out of. I had the meatloaf for lunch today along with some sauteed potato. Thank goodness I bought giant bags of onions and potatoes. Otherwise I’d be very low on food. I’m also fortunate that the tomatoes I bought were really large, I’ve been able to ration them pretty well and I think I’ll have enough to last me until Sunday. I’ve only been using a small amount.
