Gluten-Free Stuffing

Stuffing is probably my favorite side on Thanksgiving. Here is my gluten-free recipe, no one I’ve served it to has had any idea it’s not full of wheaty-death. Ingredients: 1 lb gluten-free bread (I don’t eat a ton of gf bread, but not is the perfect time to bust it out! I like this one) cut into cubes 6 tbsp butter, plus more for the top of the stuffing 1 large onion, diced 3 stalks celery, diced 2 garlic cloves, minced 3 tbsp dried sage 2 tbsp Trader Joe’s 21 Seasoning Salute (optional, but I love it) 2-3 cups chicken or turkey stock, preferably homemade salt and pepper Directions: Sauté the onionsand celery in butter. When it’s completely soft and the onions are translucent, add the garlic and sage and remove from heat. Add the 21 Seasoning Salute, if using. In a large bowl, toss the veggies with the bread. You guys this paleo pumpkin pie is just good. I dono’t even like pumpkin and I like this recipe.  Truth be told, I don’t love pumpkin pie. I know, the horror. Raw Tuna Salad

I love tuna (especially if it’s rare or raw). If it’s on a menu, you can pretty much bet your boots I’m ordering it. So if I’m at a sushi restaurant, I literally order tuna 100% of the time. And as much as I love sushi, it’s not exactly a health food. Don’t get me wrong, fish is amazing for you and white rice is an easily digestible grain that provides glucose. But unless you’re at a great place, it’s likely farmed fish that’s covered in wheat-ified soy sauce and the sauces are usually made of vegetable oils. Not good. Whenever Scott and I are trying to figure out a healthy dinner date, I always suggest Greek food. Not only is the food amazing, but it’s so easy to eat a nutritious meal at Greek restaurants. Paleo Orange Chicken

I used to really love PF Chang’s. I mean, have you had the lettuce wraps? And the orange chicken? It’s all awesome. My favorite entree was orange peel shrimp. I’d get it every single time I went. But then I learned about health, and ingredients, and rancid vegetable oils, and sugar, and wheat and all that junk that goes into restaurant food. And I haven’t been back since. I recently figured out I could make my own version of the sauce that tasted pretty damn close to the original, no wheat, sugar, or vegetable oils involved. You can make this with shrimp or chicken, I made it with chicken because that’s what I had on hand.
