Shrimp & Avocado Salsa

Today is Cinco de Mayo, and like any good Arrested Development fan, yesterday I celebrated Cinco de Cuatro. In doing so I made this Shrimp & Avocado Salsa. It’s easy to throw together and it’s a super nutrient dense meal. Because I’m planning on getting preggers soon, I like to make sure every meal I’m eating is loaded with vitamins, minerals and healthy fats. Scott loves tuna salad. With extra mayo. In fact I made a bunch of this earlier this week and he ate it on the way to work this morning. Lately, I’ve been all about making smoothies. Don’t get me wrong – not the smoothies that contain a shit ton of sugar (even if it’s from fruit, three cups of fruit is way too much). Not low fat smoothies either. If you’re not consuming fat with your smoothies, you’re not absorbing the fat-soluble vitamins. I love a good smoothie. The smoothies I’m making are a great way to get extra veggies into your diet. They actually make an awesome snack. I add chlorella, bentonite and diatomaceous earth because I’m planning on getting knocked up in the not so distant future and these are extremely detoxifying. The chlorella removes mercury while the bentonite and diatomaceous earth remove harmful bacteria, yeast, and toxins. I’m one of those people that LOVE mayo. Back in the day when I’d actually eat mayo in restaurants, I’d always ask for extra. If I got a BLT, I wanted to bite into and have the mayo drip out. That kinda mayo lover. The sort of gross kind. But I’ve never found a fully healthy store bought mayo without GMOs or refined oils or oils that are super high in omega-6 fatty acids (which leads to inflammation – we want to avoid that). I’ve really been craving blueberries lately. I got a bunch of bags of frozen bags of organic blueberries at Trader Joe’s and they’re surprisingly delicious. Paleo Beef Stroganoff

I love me some Russian food. It’s so filling, hearty and healthy. Most recipes of beef stroganoff (or stroganov) call for flour. I’m not down with flour. It’s not nutrient dense but it is inflammatory, so I avoided it altogether to make this version of paleo beef stroganoff. I also didn’t have any wine, but found that soaking the meat in apple cider vinegar beforehand provided that wine flavor. I actually bought a cheap cut of grass-fed beef (skirt steak) which I always find tough. I read that marinated it in apple cider vinegar softens the meat, and it definitely did.
