Pesto Chicken and Veggie Kabobs (Paleo, Gluten-Free, Keto)

These chicken and veggie kabobs are paleo, gluten-free, keto and low-carb. They take a bit of prep but are quick to cook and leave next to no mess because you’re just grilling them! Such a perfect recipe for summertime. These are the skewers I made for Father’s Day. I used herbs from my garden and they came out SO well. I’ve actually never cooked chicken and veggies together, but it worked out perfectly. These skewers were SO super simple and my husband loved them. I served them with my fancy caprese salad and some rice based spaghetti. They are the perfect summer grilling recipe! It’s a healthy dinner and the leftovers are perfect for lunch the next day. An Unbiased Review of doTERRA

I have done several reviews on various companies, mostly meal replacement shakes. You can check out all of my reviews here, they include Beautycounter, Rodan + Fields, Beyond Meat and Arbonne. But over the last year I’ve received an incredible amount of requests to review essential oil companies. Which leads to my (mostly) unbiased review of doTERRA. My Back Story With doTERRA When doTERRA and Young Living came on the scene several years ago, I ignored it at first. I liked essential oils, but turning them into a business? That wasn’t for me. I had blogging and health coaching and programs. I wasn’t interested in selling essential oils. And then I kept seeing the stories. The “I made $100k this month from my oil business!” stories. And I got intrigued. Month after month I was seeing more and more about women making gobs of money from oils. So I set…

Fancy Caprese Salad (Gluten-Free)

This fancy caprese salad is gluten-free, low carb, super easy to make and such a crowd pleaser. Try it for your next cookout or dinner party! I made this fancy caprese salad for our Father’s Day dinner. We had gone to a nice brunch earlier in the day and Scott actually told me this meal was better. I made this salad, spaghetti with homemade sauce (his favorite) and grilled chicken and veggie skewers. I have to admit, it was a damn good dinner. I prefer using buffalo mozzarella because not only is it incredibly creamy, it’s easier to digest than cow’s milk. I don’t have a dairy allergy, but with being celiac, I do have a more sensitive digestive system. I actually gave up dairy for close to a year when I was pregnant and then nursing my son (he had terrible reflux). I thought it might also help my…

What To Do If You’re Bitten By a Tick

A couple weeks ago my nine month-old son woke up with a tick behind his ear. We were playing in the backyard the night before and I guessed we missed it. I went into full panic mode. I am terrified of Lyme disease and living in Maryland, though less than a mile from DC, there’s still a decent amount of Lyme infested ticks. If you live in a state with a low population of Lyme infested ticks, you may not have to take these precautions. But if you live in the Northeast/Mid Atlantic, it’s worth covering your bases. I researched thoroughly and contacted two different doctors, one who specializes in Lyme. Here is the protocol I came up with. Remove the tick very carefully. I took a good pair of tweezers and clamped down as close to my son’s skin as possible. Then I firmly and swiftly removed the tick…

Greek Chicken and Rice Bowl (Gluten-Free, Paleo, Keto Option)

This Greek chicken and rice bowl is gluten-free with a paleo and keto option, easy to throw together and incredibly delicious. It’s perfect for dinner or you can meal prep it to have lunch throughout the week! This Greek Chicken and Rice Bowl recipe is great for easy meal prep and midweek work lunches! So we live in walking distance of Cava. If you’re not familiar with Cava, it’s like a Mediterranean/Greek Chipotle. And it’s AWESOME. But ya know, it costs money and they probably use industrialized oils to cook their food. That’s the thing about eating out – you never know the ingredients. So instead of spending my hard earned money on less than stellar ingredients, I decided to make my own version of their Greek chicken and rice bowl. Why you’ll love this recipe: Paleo Greek chicken and rice bowl is an awesome recipe for your healthy meal…

The Science Behind CBD

CBD, or cannabidiol, has grown rapidly in popularity over the last year or two. And for good reason, emerging research demonstrates its efficacy for a wide range of symptoms – from seizures to anxiety to polycystic ovarian syndrome to PTSD. As it turns out, while CBD is relatively new, there’s a significant amount of science and studies to back up just how beneficial it seems to be – with more science emerging all the time. While a wonder drug doesn’t exist, CBD is incredibly beneficial for a plethora of common ailments. What is CBD? CBD is a natural compound found in the cannabis plant. Unlike THC, which is also found in the cannabis plant, CBD does not have psychoactive properties. What are the benefits of CBD? One of the best features of CBD is that it doesn’t have just one benefit. Research has shown that it works on numerous bodily…

Keto Cabbage Lasagna

Why waste calories on tasteless store-bought lasagna noodles when you can enjoy a big portion of healthy low-carb & keto cabbage lasagna instead!? This quick and easy keto lasagna recipe is insanely good. I got the idea from my brother, whose coworker made it for him. He didn’t have the lasagna recipe but described it to me and this is what I came up with. Cabbage Lasagna may be the most genius keto recipe creation ever! In this easy keto lasagna, we didn’t miss the noodles at all. Admittedly, this low carb lasagna recipe might sound a bit strange since it’s made with steamed cabbage instead of lasagna noodles but trust me, it just works. Cooked cabbage has a similar texture and consistency to pasta, without adding hardly any carbs to your homemade lasagna. The steamed cabbage marries the cheese and meat sauce together perfectly. Guys, this keto cabbage lasagna…

Pistachio Keto Pudding (Paleo, Sugar-free & Dairy-Free)

This pistachio keto pudding is insanely delicious. It also happens to be paleo, dairy-free, refined sugar-free and perfect for those late night sugar cravings. Curb your sugar cravings with this keto pudding recipe! Ever since I had Storm, I’ve had a bit more of a sweet tooth. I’ve never really cared much about sweets – gimme chips over chocolate any day – but once I started breastfeeding, I just had sugar cravings. Now, I’m no longer breastfeeding. It was a long, drawn-out saga that I felt really guilty about but after severe tongue and lip ties, lactation consultants, exclusively pumping around the clock, I just couldn’t do it. Not sure how I got off on a tangent about my breastfeeding struggles here. Anyway! So when I was breastfeeding I wanted ALL. THE. FOOD. It was amazing. I ate all day long and loved it. But I also ate my fair…

Ground Beef Stroganoff (Paleo, Whole30, Low-Carb)

This ground beef stroganoff is a quick, cheap and easy meal thanks to swapping steak for ground beef! Plus it’s paleo, whole30 and low-carb! This Ground Beef Stroganoff is a super quick and easy weeknight dinner recipe, that your whole family will love. I looove beef stroganoff. It’s one of those comforting meals that is quick and easy to make, plus it can feed your whole family with a short list of ingredients! But I don’t love it with beef cubes or steak. It takes longer to cook and it’s much chewier than ground beef. If you’re wondering why that matters, it’s because my teeth have been hurting. A filling has started to move somehow and my dentist tried to charge me $750 to fix it. So I left. And came home and made ground beef stroganoff because it’s easy to chew. Super appetizing right? I’m really selling this ground…

Plus it makes the perfect high protein lunch or a quick snack! Try this easy keto egg salad recipe and you’ll never go back to store-bought! l really love egg salad. I grew up eating my grandmother’s – slathered in regular ol’ store-bought mayo. You know, the kind with either soy or canola oil. Here’s the thing about soy and canola oils: they’re terrible for you. Soy and canola are oils are created similarly, the oils are extracted using hexane (a neurotoxin), they then undergo an extreme amount of heat, pressurization and deodorization. To learn more about how these oils are produced, I wrote a more in-depth article you can check out here. What you’re left with is a…
