Greek Cauliflower Rice Salad

Greek Cauliflower Salad! A delicious alternative to the rice filled versions! I'm completely in love with the riced cauliflower. It so easy and incredibly healthy. While I didn't make this meal specifically as a low carb option, it is a great low carb salad. Plus the cauliflower is way healthier than quinoa, orzo or rice.

Ingredients
  

  • 2 cups riced cauliflower saute until soft, then let it cool in the fridge
  • 1/2 cucumber diced
  • 1/2 red onion diced
  • 1 large tomato diced
  • 1 tbsp dill
  • 1 large garlic clove minced
  • 1/4 cup olive oil
  • salt and pepper
  • options: olives

Instructions
 

  • Combine all ingredients and give it a good toss.
  • Serve cold.

Notes

You can add olives, but I hate them.
