This easy oven-baked salmon recipe has quickly become my go-to for an easy weeknight dinner. It’s healthy, it’s delicious, low carb and it’s ready in fifteen minutes.

I came up with this salmon recipe when I had too many fresh herbs that were about to go bad. The genius thing about this recipe is that you’re basically cooking your fish in a parcel made out of parchment paper.

This easy method saves on mess and many dishes. But there’s more: cooking fish this way preserves nutrients and creates so much flavor because all of the aromas from the fresh herbs are basically trapped inside the parchment paper. The salmon basically steams it in its own juices. DELICIOUSNESS!

What’s great about this oven baked salmon recipe is not only is it easy, it’s incredibly healthy.

What’s the best temperature for baked salmon?

I bake the salmon at 400F for 15 minutes and it comes out perfect every time. Make sure to check your oven has really come up to temperature using a kitchen thermometer.

How to make this Baked Salmon recipe:

Preheat your oven to 400F and line a baking dish with parchment paper. Arrange your salmon fillets (center-cut is best) on top of the parchment paper.

Mix herbs, chopped fresh tomatoes and olive oil and pour over the salmon.

Wrap the salmon in the parchment paper, see above. Fold the parchment paper over the salmon fillets and seal the edges well by making overlapping folds all around the edge. Then bake for 15 minutes!

Be careful when you open the paper: a lot of hot steam will escape.

How do know if salmon is cooked?

Since the salmon fillets are encased in parchment paper, there’s really no good way to check whether they are done. So sticking to the baking time and making sure your oven has come up to the right temperature is key.

Salmon will change its color from translucent to opaque as it cooks. After the 15 minutes, let the salmon rest in the parcel for 5 minutes.

Then open the parcel and check your salmon fillets for doneness, by taking a sharp knife to peek into the thickest part. The salmon is done when it flakes easily with a fork. It should not be raw in the middle but a little translucency in the middle is perfect.

Can I make this baked salmon recipe from frozen salmon?

I do not recommend baking frozen salmon, as you may accidentally overcook the outside while trying to cook the middle to the right doneness. If you forgot to thaw the frozen fillets in the fridge overnight, you can always run cold water over the salmon fillets to thaw them. Alternatively, defrost the fish in the microwave.

Tips for making this Oven Baked Salmon recipe:

  • You could also lay your fish on a bed of baby asparagus, spinach, sugar snap peas, or sliced zucchinis and bell peppers.
  • Feel free to use your favorite herbs: any kind of fresh herb would work with this parchment paper baked salmon, so feel free to sub your favorite one!
  • Lemon slices would be another great addition.
  • When using the parchment paper technique (en papillote), make sure you choose center-cut salmon fillets. Meaning, ones that come from the thickest part of the fish. Otherwise, the flesh will cook very quickly and won’t be as tender and moist.
  • Remove the skin from your salmon fillets. While I do love crispy pan-fried salmon skin, when baked this way, it’ll only turn slimy on you.

Ingredients
  

  • 3 salmon filets
  • 3 tbsp chopped parsley
  • 3 tbsp chopped chives
  • 3 tbsp chopped basil
  • 1/2 cup chopped cherry tomatoes
  • 1/4 cup olive oil

Instructions
 

  • Preheat the oven to 400.
  • Lay parchment or wax paper in a baking dish.
  • Add the three pieces of salmon on top of the wax paper.
  • Mix the tomatoes, herbs and olive oil and pour over the salmon.
  • Fold the wax paper over the salmon to cover.
  • Bake for 15 minutes.
