Easy Herb Baked Salmon

For an easy, healthy and delicious dinner, look no further than this Oven Baked Salmon recipe. Salmon fillets are wrapped in parchment paper and baked to perfection along with fresh herbs and tomatoes! The moistest and juiciest piece of salmon you will ever try!

Ingredients
  

  • 3 salmon filets
  • 3 tbsp chopped parsley
  • 3 tbsp chopped chives
  • 3 tbsp chopped basil
  • 1/2 cup chopped cherry tomatoes
  • 1/4 cup olive oil

Instructions
 

  • Preheat the oven to 400.
  • Lay parchment or wax paper in a baking dish.
  • Add the three pieces of salmon on top of the wax paper.
  • Mix the tomatoes, herbs and olive oil and pour over the salmon.
  • Fold the wax paper over the salmon to cover.
  • Bake for 15 minutes.

Notes

  • You could also lay your fish on a bed of baby asparagus, spinach, sugar snap peas, or sliced zucchinis and bell peppers.
  • Feel free to use your favorite herbs: any kind of fresh herb would work with this parchment paper baked salmon, so feel free to sub your favorite one!
  • Lemon slices would be another great addition.
  • When using the parchment paper technique (en papillote), make sure you choose center-cut salmon fillets. Meaning, ones that come from the thickest part of the fish. Otherwise, the flesh will cook very quickly and won’t be as tender and moist.
  • Remove the skin from your salmon fillets. While I do love crispy pan-fried salmon skin, when baked this way, it’ll only turn slimy on you.
