Easy Banana Pudding (Paleo & Dairy-Free)

I remember the first time I ever had banana pudding. I was in the hospital and I thought it was the best thing I ever tasted. It was bright yellow. Probably from toxic food dye. But you don’t think about that when you’re 7. After making my easy 5-minute paleo pudding last week, I was stoked to make more. I mean, it’s the easiest dessert I’ve ever made and you can customize it a million different ways, which is why I plan on making chocolate pudding later today. I topped it with whipped coconut cream (you just blend the thick part of coconut milk with some honey) but I whipped it really quick because I was being impatient and it fell. I’m not good at being patient when the pudding is involved.   Paleo & Dairy Free Banana Pudding This paleo banana pudding must be the easiest dessert I’ve ever…

The Easiest Lunch Ever

This was no joke one of my favorite lunches ever, and it came together in under 20 minutes. And I may have had the same thing for dinner…and then again for lunch the next day. Ya know what they say, simple food is the best food. The other good thing about this is that you can make all of the ingredients in bulk to throw together, or use for other meals. Chicken: Cut up 1 large chicken breast and sauté in bacon fat with a couple of drops of liquid smoke. Rice: Cook the rice according to package directions. Add chopped up cilantro. You can also use cauliflower rice if you don’t do rice or if you are strict paleo. Drizzle some lime over it to make it taste more like Chipotle’s rice. Pico de Gallo: Oh my god pico is my favorite. When we go out to Mexican restaurants,…

An Unbiased Review of Advocare

Way back when I wrote my review of Herbalife, I had no idea it would garner the attention that it did. After Herbalife, I reviewed Isagenix because I received so many emails asking me about the quality of the products. Today, after receiving yet another review request for Advocare, here it is. First of all, I do not advocate meal replacement shakes in general. The basis of my nutrition coaching is not about shortcuts. It’s not about drinks that help you become “trim,” and it’s not about sketchy protein bars. Before it’s asked, this is the protein I use and recommend. I couldn’t find one good enough on the market, so I made my own. Grass-fed collagen with six organic superfoods: kale, spirulina, wheatgrass, broccoli, spinach and turmeric. I drink it in my daily smoothies and it gives me LIFE. Aka a healthy gut, glowing skin, strong digestion and energy…

Green Smoothies: Not As Healthy As You Think

When I was younger and decided I would start eating well, I immediately began drinking green smoothies every morning. It was also around this time that I developed a severe case of candida that would likely return if I resumed my high carb, low-fat diet of days past. Because here’s the thing about green smoothies that no one talks about: they’re full of sugar. The basis of a smoothie is 2 cups greens + 2 cups liquid + 3 cups fruit. Every day I’d combine spinach, water and mixed fruit like pineapple, banana, berries, apple, etc. While berries are lower in sugar, the majority of the fruit is full of sugar. While that sugar is healthier sugar than what is found is soft drinks or beer, it’s still a lot of sugar to be ingesting. Especially first thing in the morning! Take a look at these sugar comparisons: Product Sugar…

5 Minute Paleo Pudding

This is easily the quickest and simplest dessert I’ve ever made. On top of that, it’s full of healthy fat from the coconut milk. I know people love decadent, chocolatey, fancy desserts, but the good news about this pudding is that it can be used as a base for any flavor you want, and can even be used for pie filling. It’s versatile like that. Want chocolate pudding? Add a half cup of raw cacao. Want raspberry pudding? Just puree the raspberries and add ’em right in. Want banana pudding? Mash up some banana is stir it in. You can also make these in bulk and put them in the freezer. Thaw when you want a sweet snack that won’t spike your blood sugar. Ingredients: 1 can coconut milk 1/4 cup honey (more if you like a sweeter pudding) 1 tbsp gelatin 1 tbsp vanilla Directions: Heat the coconut milk over…

How I Fell In Love With (And Got Engaged To!) A Vegan

The very first time I met Scott and found out he was a vegan, we ended up in a pool at 3 am with me telling him how stupid his life decisions were. “Don’t you know over 90% of soy is genetically modified?” “Don’t you know wheat will kill you?” “Don’t you know that grain and legume production is destroying the earth?!?!” I like to think this is the exact moment he fell in love with me. It was the summer of 2011 and before our first date, I emailed my best friend to say “Where could this possibly go? He’s vegan.” And here I am two and half years later, engaged to that vegan. From our very first date, I really didn’t stand a chance. Even if I didn’t want to date a vegan, I was going to. And I was in love with him in about two seconds.…

Tomato & Artichoke Chicken

Ya’ll know I’m a fan of easy, simple dinners. We got back from Roatan late Saturday night and I have never been happier to sleep in my own bed. It was amazing and I was exhausted. By Sunday I was feeling better from a week’s worth of cooking that wasn’t my own, but after going to check out a wedding venue and grocery shopping, I was not feeling my usual Sunday meal prep. I recently had a salad with artichokes and grape tomatoes, so I was dying to turn that into some sort of dinner. This dinner was only 5 ingredients and took about 2 minutes to assemble and throw in the oven. Plus, you can cook the entire thing in a cast iron pan; I love not having to clean up multiple pots and pans! It was awesome, and now I have leftovers. I’m telling’ ya people, make enough…

Broccoli & Tomato Quiche

I don’t know about you, but the last thing I want to do as soon as I wake up is cook breakfast (whether it’s for me or someone else). I always recommend and factor batch cooking into my meal plans. It just makes life so much easier. You cook once and have breakfast for the entire week. This quiche was beyond and easy and tasted amazing. It’s also an extremely healthy and balanced breakfast. It is full of vitamins, healthy fats and omega-3s from the eggs (make sure to buy pastured eggs) as well as veggies and grass-fed cheese. This quiche take about 6 minutes to assemble, 40 minutes in the oven and you’re done. You have breakfast for the week. You can make more or less depending on how many you’re feeding.

How To Stay Healthy On Vacation

At the end of the month Scott and I are heading to Roatan, Honduras. I am beyond excited and thought I would share some tips I use to stay healthy while on vacation. Come Prepared I recently wrote a post on all of my travel essentials. Make sure to bring your non-toxic bug spray and suncreen. The first year I really traveled, we went to Panama and I neglected to bring my own bug spray and sun screen. We needed bug spray, I mean it was a necessity. We ended up buying the spray that contains DEET, as well as regular old toxic sunscreen. When people think of staying healthy on vacation, they often forget that what is applied to the skin is absorbed by the skin and can be a huge source of toxins. Come prepared! Call Ahead We are staying at an awesome little beach resort right on the…
