Thai Pork Stir Fry
YOU GUYS. THIS THAI PORK STIR-FRY WAS SO GOOD. The other night I had a couple friends over for dinner, including my BFF, Jennifer. The first time I had ceviche was on a remote beach in Mexico with Scott (then boyfriend, now husband). It was a tiny island called Holbox and I am seriously jonesing to go back. But for now, the closest I’m going to get is trying to recreate the ceviche I had on the beach that day. It was so flavorful, with fresh caught shrimp, mango, red onion and a whole bunch of cilantro. It was spicy from jalapeño, which I love but omitted from this recipe because Scott hates it. But if I were you, I’d definitely add a bunch of it! I am continually trying to create an awesome grain-free, sugar-free recipe for cinnamon rolls. I have the flavor down. I make the dough, I roll it out, I add the cinnamon and coconut sugar filling…and then I try to roll it up. This is where it always falls apart. It’s easy to roll out a gluten-filled dough for cinnamon rolls because the gluten acts as a binder. When it comes to grain-free baking, this aspect is tough because it just doesn’t hold together like gluten. So Im’ still working on a recipe for the dough, but in the meantime, I’m in love with these cookies. They taste exactly like a delicious cinnamon roll, just in cookie form. Best Ever Breakfast Potatoes
Every Sunday, I make a big batch of these breakfast potatoes to eat throughout the week. They taste amazing and they’re super healthy. You could use a white potato (don’t believe the hype that they’re horrible for you) but I usually use a white sweet potato. I also use a green pepper and an onion so this these breakfast potatoes are packed with veggies. Alternatively, you could bake them. Which is actually easier, but you have to check on the periodically and give them a toss to make sure they’re browning/cooking evenly. If you’d prefer to bake this, bake on 400 for about 20-30 minutes, turning the veggies every ten minutes or so. Navigating My Anxiety.
This past December, I remember thinking how proud of myself I was for overcoming my anxiety. I couldn’t even remember the last time I had an anxiety attack. Any form of anxiousness that popped into my life was manageable, normal and extremely easy to cope with. I had dealt with anxiety since childhood, but it finally seemed like I beat it.
