Grain-Free Enchiladas

Scott and I love Mexican food. LOVE. I mean, hello, we’re American after all. Unfortunately we don’t go out to eat it very often because Mexican food is loaded with GMOs (read: corn). Corn is one of the highest genetically modified crops in the country, so everything from tortilla chips to tacos to enchiladas is likely GMO. And don’t even get me started on the vegetable oil most restaurants use. This is why I was so happy to recreate this Mexican classic. I’ve tried different recipes for the tortillas and this is my favorite. Like a normal flour tortilla, it doesn’t have much flavor but it has a the same texture and absorbs the enchilada sauce. Beauty Hack: Use Trader Joe’s Coconut Oil Spray As A Quick Body Lotion Or Hair Mask

A few days ago I posted a picture of Trader Joe’s Organic Coconut Oil Spray on my Facebook page telling everyone how I started using it as a quick body and hair spray (for fly aways, dry ends and deep conditioning masks). I got quite a few comments, ranging from excited to try it to concerned about the ingredients to telling me I’m lazy (really dude?) to someone who thought it was creepy. How coconut oil is creepy is beyond me. To those concerned about the ingredients, it contains organic coconut oil, soy lecithin, natural flavors and propellant (no chlorofluorocarbons). While I generally recommend only applying to your body what is safe to eat, and I don’t eat soy, this contains a minuscule amount of non-GMO soy lecithin (I asked about the non-GMO part).
