This paleo black forest cake would be really excellent for like, a murder themed dinner party. Or a murder mystery party. Or a gory themed Valentine’s Day dinner. I mean, look at it. It’s dramatic and kind of looks like it’s dripping blood. Delicious, right?

Seriously though, it’s really good. And it’s really easy to make. Trust me, I’m horrible at baking.

So here’s how I did it – I bought boxed cake mix. Never heard of a paleo boxed cake mix?

ALSO – Simple Mills makes amazing crackers, ready-made cookies and FROSTING. I didn’t use the frosting in this recipe, but it’s one of the best frostings I’ve ever had.

Okay, back to the recipe at hand (sang this in my head to the tune of Nothin’ But a G Thang).

I used boxed mix because I hate baking and can’t follow directions. All you have to do for this easy recipe is add eggs, vanilla, water or milk and melted butter. It’s delightfully easy and turns out perfectly every time.

Paleo Black Forest Cake

This paleo black forest cake would be a great dessert for Valentine’s Day dinner or Mother's Day. Extremely moist, decadent and delicious and really easy to make. Trust me, I’m horrible at baking.

Ingredients
  

  • 2 boxes Simple Mills boxed chocolate cake mix see notes
  • 6 eggs
  • 1/3 cup water per box
  • 2 tbsp vanilla
  • 1/3 cup butter or oil use grass-fed butter! per box

Icing

  • 4 cups coconut cream or grass-fed whipped cream
  • 2 tbsp raw honey

For the Cherry Topping

  • 16 oz frozen cherries
  • 1 tbsp butter
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 1 tbsp arrowroot powder

Instructions
 

  • Make and bake the cake mix according to package instructions.
  • For the frosting, add the coconut cream and honey to a large bowl and whip together with a hand blender. Set aside.
  • For the cherry mixture, add the cherries to a saucepan over medium heat with all the juice in the bag (frozen cherries have a good amount of juice).
  • Add the butter, vanilla and almond.
  • Let it heat up.
  • Sprinkle the arrowroot powder overtop and let it thicken.
  • Once the cake has cooled, add the whipped cream to the top.
  • The add half of the cherry mixture.
  • Top with the second cake half.
  • Add the rest of the whipped cream.
  • Pour the rest of the cherry mixture overtop.
