This paleo black forest cake would be a great dessert for Valentine’s Day dinner or Mother's Day. Extremely moist, decadent and delicious and really easy to make. Trust me, I’m horrible at baking.
Make and bake the cake mix according to package instructions.
For the frosting, add the coconut cream and honey to a large bowl and whip together with a hand blender. Set aside.
For the cherry mixture, add the cherries to a saucepan over medium heat with all the juice in the bag (frozen cherries have a good amount of juice).
Add the butter, vanilla and almond.
Let it heat up.
Sprinkle the arrowroot powder overtop and let it thicken.
Once the cake has cooled, add the whipped cream to the top.
The add half of the cherry mixture.
Top with the second cake half.
Add the rest of the whipped cream.
Pour the rest of the cherry mixture overtop.
