The Best Gluten-Free Sugar Cookies

These sugar cookies are not only easy to make, they're absolutely delicious! Plus so, so moist. Sorry for using the word moist.

Ingredients
  

  • 2 and 1/4 cup Bob's Gluten-Free 1:1 Flour
  • 1/2 tsp baking powder
  • 1.5 sticks butter, melted
  • 1 egg
  • 3/4 cup sugar
  • 1 tbsp vanilla extract

Icing

  • 1 stick butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • food coloring, if using

Instructions
 

  • Melt the butter in a bowl.
  • Once cooled, add the egg. Don't cook the egg!
  • Add the sugar.
  • Add the flour, baking soda and vanilla.
  • Mix into a dough.
  • Form into balls and then pat down a bit before baking.
  • Bake for 12 minutes.

Icing:

  • Mix one stick of soft butter and 2 cups of powdered sugar.
  • Add tsp of vanilla.
  • Add food coloring if using.
  • Blend until smooth.
  • Add onto cooled cookies!
