- 1 16 oz can coconut cream (from Trader Joe's)
- 1 cup raw, unsalted pistachios
- 1 tsp vanilla extract
- 1 tsp stevia (or to taste)
- To get a nice and smooth pistachio pudding, make sure to use a high-speed blender, like a Vitamix.
- Start with half the amount of stevia and work your way up, stopping once you find your pudding sweet enough.
