This pistachio pudding is insanely delicious. It also happens to be paleo, dairy-free, keto, refined sugar-free and perfect for those late night sugar cravings.

Ingredients
  

  • 1 16 oz can coconut cream (from Trader Joe's)
  • 1 cup raw, unsalted pistachios
  • 1 tsp vanilla extract
  • 1 tsp stevia (or to taste)

Instructions
 

  • Combine all ingredients in high-speed blender.
  • Blend until smooth and creamy. 

Notes

  • To get a nice and smooth pistachio pudding, make sure to use a high-speed blender, like a Vitamix.
  • Start with half the amount of stevia and work your way up, stopping once you find your pudding sweet enough.
  • Go for a high-quality, pure and organic vanilla extract, like this one!
