Paleo Egg McMuffins

This is my healthy spin on a breakfast favorite - the McMuffin. My version is paleo-approved and made with homemade grain-free English Muffins.

Ingredients
  

  • 4 English Muffins see notes
  • 4 eggs
  • 4 slices of prosciutto

Instructions
 

  • Make the English Muffins according to directions and set aside.
  • Line a muffin pan with 4 muffin tins. On the bottom, place the slices of prosciutto.
  • Crack the egg on top of the prosciutto.
  • Bake on 350 for about 12 minutes.
  • Serve on the English Muffins with cheese, lettuce, tomato, whatever you like.
  • I wrapped these tightly in plastic wrap, you could also freeze them.
