Ingredients

  • 1 medium potato peeled and diced
  • 1 tbsp unflavored coconut oil found here
  • 1/3 to 1/2 cup pork belly diced into bite sized pieces
  • 1/2 onion diced
  • 1/2 green pepper diced
  • sea salt

Instructions

  • Soak the potatoes in 1 tsp sea salt and water for about 10-15 minutes. This helps remove the starch so they crisp up.
  • Saute the potatoes in one tbsp of the coconut oil.
  • Once the edges are crispy, add the pork belly, onion and green pepper.
  • Cook until soft.

Notes

Optional: add jalapeños and top with a fried egg. I did. It was great.
