Gluten-Free Creamy Wild Rice and Chicken Soup

Ingredients
  

  • 2 tbsp olive oil
  • 1 large onion, diced
  • 4 celery stalks, diced
  • 2 garlic cloves, minced
  • 2 carrots, chopped
  • 5 cups bone broth
  • 1 cup wild rice
  • 1 lb chicken thighs or breasts
  • 8 oz cream cheese
  • 1/4 cup parsley
  • 1/4 cup dill
  • 2 tbsp fresh chives

Instructions
 

  • Over medium heat, add the olive oil, onions and celery and cook until translucent.
  • Add the garlic and carrots, stir until fragrant.
  • Add in the bone broth, rice and chicken.
  • Cover and turn to low.
  • Let it simmer for about 45 minutes.
  • Remove the chicken, then chop or shred it and add it back.
  • Add the cream cheese and herbs, stir until combined.
