Gluten-Free Smoked Salmon Toast

Move over avocado toast, this gluten-free recipe for smoked salmon on toast is as delicious as it is healthy! Rich in protein and omega-3 fatty acids, it'll be your new favorite breakfast!

Ingredients
  

  • 2 slices gluten-free bread
  • 2 tbsp cream cheese
  • 4 oz smoked salmon
  • 1/3 cup cherry tomatoes, diced
  • 1/3 cup cucumber, diced
  • 2 tbsp red onion, diced
  • sprinkle of dill

Instructions
 

  • Toast your pieces of bread.
  • While that is toasting, combine the tomatoes, onion, cucumber and dill. Mix and set aside.
  • Add the cream cheese to the bread.
  • Top with salmon.
  • Top with salad.

Notes

  • Add some capers if you're a fan.
  • Take this to the next level by stirring some finely grated lemon zest and black pepper into the cream cheese before spreading it onto your toast.
  • Want to add some more color? Use multicolored tomatoes!
  • If your tummy doesn't like raw onions, you can quick-pickle them in some ACV. Place thinly sliced onion in a bowl and toss with 1 tsp of sea salt. Whisk apple cider vinegar, some lemon juice and 1/2 tsp sea salt. Add the red onions, making sure that all the onions are submerged in the pickling liquid. Cover and let sit at room temperature for at least 10 minutes, better after one hour.
