If you digest rice well and are looking for an easily absorbable form of glucose, and want to make things that taste really, really good, you need to make this rice.
I love that it’s not only loaded with veggies, but also healthy fats from the bone broth and butter (which slows the absoption of glucose). It’s the perfect side dish.

Ingredients
  

  • 1 cup rice or you could use 2 cups of cauliflower rice
  • 1.5 cups bone broth or water bone broth makes this much more nutrient dense
  • 4 cups fresh spinach chopped
  • 1 onion diced
  • 3 garlic cloves minced
  • at least 1 tbsp dill sprinkle of oregano optional
  • 4 tbsp butter or ghee

Instructions
 

  • Cook rice. In a separate pan, saute the onion in the butter. Once the onion is soft, add the chopped spinach. Cook until completely soft. Add the garlic, dill, oregano.

Notes

This Greek Rice tastes especially good with lamb!
